Doughnut Muffins

I never come up with anything awesome as far as food..... well as in I hardly ever "Invent" anything new. I do however own 10000000 cookbooks and subscribe to about 250 blogs that are all packed to the rim with amazing recipes. So like many recipes that we love this one is from one of those awesome blog..... which I cant remember.... I remember writing it down in my favorite recipes book but cant remember where. .. so sorry. But these were amazing!

Doughnut Muffins

What you need

1 3/4 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/3 cup oil
3/4 cup milk
3/4 cup sugar
1 egg


1/2 cup butter, melted
1/3 cup sugar

What to do:

Preheat oven to 350 degrees. Spray your muffin tins with cooking spray. Mix 3/4 cup of sugar with 1 egg in a mixer. Combine flour, baking powder, salt, and cinnamon in a medium bowl. Add to sugar and egg mixture. Add oil and milk. Mix to combine. Fill your muffin tin all the way to the top to get that nice round top.

Bake at 350 degrees for 15-20 minutes. While muffins are baking, melt butter in a small bowl.
Shake muffins out of the muffin tin while the muffins are still hot. BE CAREFUL
ITS HOT
!!
Dip tops muffins in the melted butter, then us a basting brush to wipe the butter onto the sides. Now roll around in the sugar.

Place on a wire rack and allow to cool

Just made them for breakfast! Yum! My boyfriend says there is too much butter...any ideas on what to roll it in to get the sugar to stick? I guess since I am more southern I don't even notice the butter...haha! Great recipe! Thanks!

Try only dipping the tops muffins in the melted butter, then us a basting brush to wipe the butter onto the sides. Now roll around in the sugar. that should work.
