{ Mini No Bake Peanut Butter Cheesecakes }
Today is BigBear's Birthday! My sweet, wonderful hubby turns 28 today! Happy Birthday, Honey!! I love you, so much!
Every year I make something special for hubby on his birthday. No matter what it is, I'll make it. It's his day, he pretty much gets to do whatever he wants. Last year, I made him a Peanut Butter Truffle Cheesecake. It was AMAZING, and Katrina from In Katrina's Kitchen gave me some wonderful advice on making it. I loved it, he loved it, all of his friends loved it, everyone loved it. So if you've got some time to spare and are looking for an amazing peanut butter cheesecake, check it out. This year though, time just doesn't seem to be on my side. It's not that my hubby isn't worth it, he totally is! But, this year for his birthday I decided to change it up just a little bit and went with a no-bake cheesecake.
It's still got all of the great Peanut Butter cheesecake flavor and it includes his three favorite things: Peanut Butter/ Peanut Butter Cups, Cheesecake and Oreos. I used crushed Oreos to make the crust bottom for these No Bake Peanut Butter Cheesecakes and then layered the peanut butter cheesecake into individual serving dishes.
**And Yea.... it's so blame hot here that the whipped cream totally melted on top within like 2 seconds LOL***

Mini No Bake Peanut Butter Cheesecakes
Ingredients
Directions
In a a stand mixer fitted with a paddle attachment, mix cream cheese and sugar. Once mixed together, mix in the peanut butter. Mix well.
Fold in the cool whip with a spatula.
Spread a layer of crushed Oreos in the bottom of the serving dishes. Spoon cheesecake mixture into dishes. Refrigerate for 4-6 hours. Garnish with whipped cream and peanut butter cups.
- 2 packages of cream cheese, 8 oz each at room temperature
- 5 tablespoons sugar
- 3/4 cup peanut butter
- 8 oz cool whip, thawed
- 1/2 bag Oreo cookies, crushed
- Peanut Butter Cups for garnish
- Whipped Cream for garnish
