Bacon and Egg Stuffed Biscuits are easy breakfast biscuits stuffed with scrambled eggs, cheddar cheese and crispy bacon.

Let me tell you something, going out now and going out ten years ago….whooo wee two completely different things. When I was 20, I was getting ready at 8 or 9 and headed out for the evening. Now it’s 9:30 and I’m done for the night and I could literally curl up on this couch right here and fall asleep within minutes.
Today we did out normal 8-5 jobs and then Thomas and I came home, got ready and headed out for an evening downtown. I mentioned over on my snapchat account last night that one of the best things about living downtown is being able to walk to and from dinner.
I mean walking with Thomas is nice and all but to be honest I really love it because I can walk off some of my dinner on the way home. hahaha

Well she walked a few blocks over to Main Street and hung around a bit for a little ceremony they were having downtown before heading over to dinner. We decided to skip the pizza place and the Bistro tonight and went with Me’s Burgers that’s by the fountain. It’s the cutest little “gourmet” burger place and all of their burgers are named after famous writers. I had the Lewis Carroll and it was fantastic, a beef burger dusted with shiitake mushrooms, topped with shiitake mushrooms and smothered in melted cheese. Was is good for me? Probably not. Was it tasty? Heck YES!
Hey, I’ve been doing the low carb thing for over 2 weeks, I think I deserved a burger WITH the bun in place. 😉 Ok, so the burger wasn’t the only thing I did bad, I also had hoem cut fries and a sunset martini. I’m blaming it on the working week and the fact that it’s was a Friday night. 😉 Yeah…that’ll work
Oh and did I mention that they have a burger building/author naming contest?! Every so often they have this little contest and you can fill out this from and create the perfect burger! If you win, you get to name the burger after an author of your choice and it’s featured on their menu for a while. Well I’m dang determined to win this contest and name this burger after my high school best friend, Liz. You see, she’s published a handful of her own novels and I couldn’t be more proud of her.
Is naming a burger after your high school best friend, weird? Well…proabably. But they said you needed to name it after an author and I can’t think of anyone better for it.

One more things before we get to the recipe for these biscuits. Ps. I don’t feel guitly at all for making these, sharing these or eating one of these because of what I’m getting ready to tell you!

I had a “non-scale” victory today! I went shopping after dinner with Thomas and I bought a few pairs of jean shorts. OK…what’s the big deal about buying shorts? Um…well for starters, I bought them after eating. haha I use to almost starve myself for like 2 days before I went clothes shopping. #2. The jean shorts I bought today are 2 sizes smaller than the jean shorts I wore last summer! BAM! YAY!! I’m so happy!
I still have a bit to go….ok a lot to go BUT I’m so happy about this. You just have no idea.

So onto these Bacon and Egg Stuffed Biscuits, after these past few weeks I need some carbs in my life. I need these Bacon and Egg Stuffed Biscuits to happen again but until they do, I wanted to share this ridiculously easy breakfast idea with y’all.

This is how I put them together!
These biscuits are made with refrigerated biscuits and stuffed with scrambled eggs, cheddar cheese and crispy bacon. Eat them while they’re hot or freeze them and save some for later! I’m not a morning person, so I would much have a brunch like this or have something like this made and ready in the freezer to heat!
