My kitchen is like a playground for the kids in my life. Big Bear and I have not been gifted with our own children yet but we have been very, very luck to have been blessed with some beautiful god-children, cousins and our sweet little niece. They are truly my heart and I love them all to pieces.
At least once a week I see them either at our house or at theirs. I even turned our spare bedroom into what we call “the girls’ room” because all of their toys and what not are in there for when they are at the house haha.
But one of my favorite creative things to do with them is play in the kitchen. They know that if they’re spending any amount of time here that we’ll probably end up in the kitchen. A few weekend ago my god-daughters, Alyssa and Kendra, were at the house and we happened to find ourselves in the kitchen. *surprise, right?!*
Alyssa immediately pipes up with “Ahhh, can we make something? What are we going to bake” So I think for a few seconds and reach into the cabinet and pull out some baking things.
Cookies! Cookies are pretty easy and I’ll just throw out some stuff and let them pick out what should go into the cookies. Out of everything I pulled down, they choose chocolate pudding and mint chocolate pieces. Girls after my own heart haha.
So that’s what we made. Chocolate mint cookies. I set everything up and operated the mixer while they measured out everything and dumped it in. Within a few minutes the first batch of cookies was headed to the oven.
They played while I read a little on my tablet while they cooked. Once the buzzer went off on the stove, they dropped what they were doing and came running back into the kitchen. They’re creations were done!
After a little taste test, Alyssa declared that they should be called Brownie Cookies because they tasted like brownies but were perfect little cookies. So there you have it, Mint Chocolate Brownie Cookies were born.

Mint Chocolate Brownie Cookies
Ingredients
Preheat your oven to 350F
Using a stand mixer, beat together the butter and both sugars until creamy.
Add in eggs and vanilla extract.
In a medium bowl, whisk together all of the dry ingredients: flour, baking soda, and salt and pudding mix.
While the mixer is running, slowly add the dry ingredients to the wet ingredients.
Continue to mix until combined.
Remove the bowl from the stand mixer and use a spoon or spatula and gently stir in your mint chocolate chips.
Using a small/medium scoop or a spoon, gather cookie dough into balls and place them onto a metal baking sheet sprayed with cooking spray. Bake for 10-12 minutes.
Remove cookies from oven and let cool on baking sheet for a few minutes and then transfer then to a cooling rack to cool completely.
Makes: about 48 cookies
