Ingredients
- 4 boneless skinless chicken breasts
- 1 cup buttermilk
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/8 teaspoon smoked paprika
- 1/8 teaspoon pepper
- 1/2 teaspoon seasoning salt
- 4 cups cornflakes cereal
Instructions
- Place chicken breasts between 2 pieces of parchment paper (or plastic wrap).
- Smack chicken breasts with a rolling pin or large wooden spoon until chicken breasts are flattened to about 1/2 inch thick.
- Season the chicken breasts (on both sides) with the garlic powder, onion powder, smoked paprika and pepper.
- Lay chicken breasts in a dish and cover with the buttermilk.
- Cover with foil and place into the fridge for 4 hours - overnight.
- When the chicken is ready, preheat the oven to 400F.
- Crush the cornflake cereal until it resembles breadcrumbs.
- Remove the chicken from the fridge.
- Pour the crushed cornflake cereal into a shallow dish.
- Pick up each chicken breast and let the buttermilk drip off.
- Lay chicken breast into cornflakes and coat each side.
- Lay the chicken breasts on a baking sheet. (I lay mine on a wire rack on top of the baking sheet.)
- Bake for 25-30 minutes or until done.
