This was one of the very first recipes that I ever made on my own. Well, I suppose a version of this recipe was one of the first since I use to make this on the stove and now it’s been turned into a Slow Cooker recipe. 🙂
Now I didn’t really start cooking until after I got married but I started collecting recipes way before that. I may not have been working my tail off in the kitchen back then but I still knew that once I got married that I wanted that perfect housewife job, apron tied around my waist, cooking amazing meals for my family! (Yes, I do plan for the future haha, I started buying stuff for my future house when I was like 15) haha
Beef and Vegetable Soup was one of those recipes that I picked up and stuffed into my recipe binder for the future, but actually ended up making it a few times before I even met BigBear. haha BUT it was pretty much the ONLY thing I ever cooked before we got married.
When I moved out of my parent’s house, I moved into this old rock farmhouse with a girl named Sarah that waited tables with me at Rockola. We literally lived in the middle of nowhere (there were only like 3 houses on our road!). With a 45 minutes ride into town, we really didn’t make too many trips out and about haha.
But even though we were out in the middle of the country, I was actually pretty close to my Nana’s house! I made sure to drop by there a bit, especially when my mom would come up to visit!
During one of my visits, my aunt Sandra made Beef Vegetable soup for dinner and I loved it so much that I had to have the recipe. She wrote it down for me and the next night I was in town, for work, and I made a stop by the store to grab everything that I needed.
I made a HUGE pot of this soup and divided it up into 1 cup servings and froze them. I literally stocked our whole freezer with Beef and Vegetable Soup…it sat perfectly beside the carton of Icee Pops. 😉
Since I’ve been on a mission to add more slow cooker recipes into my meal rotation I thought that this Beef and Vegetable Soup would be a perfect meal to make in my slow cooker!
I thought this soup was easy to make before but now that I make it in the slow cooker it’s 1000 times easier! I literally just dump everything into the slow cooker, turn it on and walk away!
That’s my kind of slow cooker meal. I love the slow cooker meals that are “dump and cook”. Isn’t that the whole purpose of a slow cooker? If I’m going to use a slow cooker I want it to do ALL of the work.
Side note- I did use canned vegetables but you could totally sub those for fresh or frozen!
