In reply to DB. I didn't grease the pan for these madeleines. My pan hasn't needed me to do so. If you're concerned you can spray the pay with a non-stick cooking spray or lightly brush it with melted butter

These are so fun! Great job stepping out of your comfort zone. You know, I used to do that more before I had a food blog. Now I need things to turn out so that I don’t have to test them as much and can move onto photos and editing and writing. It means that I don’t challenge myself as much. But I’m going to give myself a challenge soon. Thanks for the inspiration!

Madeleines are on my kitchen bucket list, too. I have a 2-year-old niece, so hopefully in a few years I can have the same adventure with her. I’ll buy that madeleine pan now, just in case. Maybe it’ll just sit in a drawer for a few year, like yours 🙂
