It’s over. Christmas 2013 has ended. Just like that. After a month or so of planning and decorating and after weeks of shopping (or a day like me haha) it’s over. Just like that, all over in one day! Are you relieved or sad?
I’m kind of in between. My big “gift” comes in February when we head off for our Anniversary Trip, so I kind of wanted Christmas to fly by haha, I know that’s wrong of me. oops. 😉 But on the other hand I love the feeling of Christmas and I wish it had stayed around a bit longer. I refuse to take my tree down today and probably won’t until Sunday 😉
We didn’t go anywhere this year for Christmas so we decided to just keep it low key at the house. (although I do plan on going somewhere next year for Christmas, last year’s Christmas at the beach was by far one of the best we’ve had.) We only did a few Christmas activities this year like taking our god-daughters to see Christmas lights and going to see their Christmas play. Even without packing a ton of Christmas stuff into the schedule it was still quite hectic, so I’m kind of thankful for not trying to cram tons of Christmas into the month. It’s easier to enjoy the activities when you’re not boggled down with stress.
We went with a super simple menu for Christmas eve this year! This never happens BUT I have to say it was totally nice. Oh so nice to NOT have to get up super early and cook all day. (I know, a food blogger that doesn’t want to cook, it’s a sin) But really, it made for a much needed “relaxed holiday”. Big Bear made Lasagna for our Christmas Eve dinner. He used some of the Gourmet Garden spices that we received from Gourmet Garden (Thank’s Ya’ll!) and I have to say it was one of the best lasagna’s that he’s ever made. I’m going to get him to re-make it soon so that I can put it on the blog!
Speaking of Lasagna, let me make a little side note here. This weekend we had our niece with us and when we took her back to NC on Sunday we went over to Randy’s Pizza on T.W Alexander Dr (in Morrisville, NC) to meet my sister in law’s new boyfriend and grab some dinner before heading back to VA. Thad (my sister in law’s bf) made us the most amazing Lasagna Pizza and I am head over heels in love with that pizza place now. Lasagna Pizza is made up of thin crust/homemade pizza dough, fresh sauce, ricotta, sliced meatballs, and I think there was also a little mozzarella on there too. The slices of pizza are also ridiculously huge haha. I loved them! I am going to have to really, really work on my pizza making skills now and make a Lasagna Pizza for the blog! Oh so, so good. (If you’re ever in Morrisville/Durham, NC go by Randy’s Pizza – I’ll put the address and such at the bottom of this post – and get a Lasagna Pizza. You’ll love it!)
Back to Christmas stuff! haha 🙂 Big Bear made Lasagna for dinner and I made an Apple Crisp and a Chocolate Peppermint Pie (it’s a take on this Whopper Pie) for dessert! Like I said no big fuss and we didn’t have to cook all day.
Oh and I also set up a little hot chocolate bar. Again, nothing much to it, I just set out some mugs, a few packets of hot coco, mini marshmallows and candy canes.
Savannah (our niece) stayed with us this weekend so we did a bit of an early Christmas while she was here. We baked Christmas cookies, we opened presents (ok she opened them but whatever) and watched Christmas movies while drinking peppermint hot chocolate. The cookies we made turned out super soft and delicious so I’ll be re-making them soon for the blog as well! They were Monster Chocolate Chunk M&M Cookies!
We decorated these enormous gingerbread men that BigBear bought from Family Dollar. She has a blast!
The next morning, Big Bear got up and made Pancakes for us 🙂 I’m not big on breakfast but I couldn’t turn these down! Not to mention I added a little “Christmas Spirit” by adding a few Christmas sprinkles to the pancakes while they were cooking 😉
I love how they turned out! Christmas Sprinkles and Gingerbread man sprinkles!

(Mine would have to be this Pandora bracelet from BigBear because he NEVER buys me jewelry)
