Hi Jeanne! You can use husked corn on the cob too! This dip is my version of a Mexican street corn turned party dip haha. Mexican street corn is pretty much just cooked corn on the cob that’s covered in mayo or sour cream and then covered in Cotija Powdered Cheese. If you want to use corn on the cob, make sure to cook it first in the oven, microwave or on the grill and then cut off the kernels to add to the dip recipe.

Haha the kidney stone was WAY more painful than childbirth. We had actually been trying to have a baby for about 10 years when I found out that I was pregnant with Jackson. We had a lot of fertility issues and he was a welcome surprise when we found out that I was finally pregnant the day before our 10th wedding anniversary. His birth was a bit on the traumatic side for me but 100% had more pain with the kidney stone than I did with him. I actually had another kidney stone the other weekend but was able to pass it without going to the hospital. Hope your kidney stones aren’t causing you a ton of pain.

I don’t do canned corn if I can help it. I was drawn in by the husking corn putting husks in the oven? But then you spread mayo on the cobs of corn? Was that for grilling them? I’m able to buy organic corn & make this dip as healthy as is possible.
I’m curious at this point; did you decide to have a baby after this experience of passing a KS, because I’ve heard a kidney stone is more painful than childbirth. Well you obviously managed it bravely so did it hasten your feeling you could definitely handle childbirth. Jax was born around the time my youngest son’s baby was born. I’ve got small kidney stones that are staying put for now.. I’m praying they will never decide to exit. I’m glad you overcame the terrible KS procedure.
