One of our favorite slow cooker recipes is this Slow Cooker Pot Roast! It’s made up of just a few simple ingredients and we love to serve it over cheesy mashed potatoes!
Now look, I’ve been making pot roasts in the slow cooker for years and to be honest I normally just grabbed those pre-made packs of beef, carrots and potatoes when I wanted to cook one. It came with an onion that I’d have to toss since Thomas can’t eat onions, a tiny cut of beef and it always had a random seasoning packet in it.
Over the past few months though, Thomas had taken over the pot roast making and the result of his first take over was this Easy Slow Cooker Pot Roast! He decided to just add mushrooms and carrots with a nice sized roast.
He didn’t add any onion and instead of a regular pot roast seasoning, he used a packet of beef stew seasoning for his pot roast.
He also ditched the potatoes in the roast and decided to make mashed potatoes as a base for the roast! This is so good!
What you’ll need:
- 3 pounds Chuck Roast
- 16 ounces (1 pound) baby carrots
- 16 ounces sliced mushrooms
- 1 (1.5 oz) packet of beef stew seasoning mix
- 4 1/2 cups water
- 1 tablespoon corn starch
- 1 tablespoon water
How to make this roast:
Add roast to crock pot bowl.
Add carrots and mushroom slices. Add in seasoning mix and water. Stir slightly.
Cook, covered, on low 6-8 hours or until meat is tender.
Once cooked, mix together the cornstarch and 1 tablespoon of water. Add to slow cooker bowl and stir.
Turn off heat and let sit for 15 minutes. Serve over mashed potatoes.
Mmmmmmmm, let me tell you, this Easy Slow Cooker Pot Roast is just fantastic! I love the mashed potatoes with it so much better than potatoes cooked with the roast in the slow cooker.
PS. the trick to getting this nice and juicy? After it’s done cooking, turn the slow cooker off and just let it sit in the juice for about 20 minutes or so!
Then just spoon the beef, mushrooms and carrots over a hot plate of mashed potatoes for the perfect comfort food meal!
You can use store bought mashed potatoes or homemade!

This came out very good. I had to tweak slightly because I forgot to get beef stew seasoning and I was not cooking at home. I had picked up pot roast seasoning instead. But, I cannot wait to make again your way. And they didn’t have a masher so it was more a smashed potato.
