Grilled vegetables are so wonderful during the summer months and we love to grill them along side of burgers, shrimp and pork chops as veggie skewers. They’re so easy to make and you can use any type of vegetable that you’d like when making them. In this post I’ll show you How to grill vegetable skewers and how we make them extra good with an garlic butter sauce!

How do you cook vegetable kabobs on the grill:
Soaking The Skewers in Water:
If you’re using wooden skewers for these vegetable kebobs you’ll need to make sure to soak them in water before adding the vegetables to the.
Soak skewers in water for a minimum of 30 minutes, before adding vegetables on to them to grill. You can soak them overnight but they should soak for at least 30 minutes before they go on the grill. This will prevent the wooden skewers from catching on fire while they’re on the grill.
Slicing the vegetables and making the kebobs:
Slice squash and zucchini into rounds. Cut roma tomatoes into quarters.
You want to try to make the pieces about the same size so that they cook evenly. I like to cut vegetables like zucchini and squash into about 1/4 of an inch rounds or thinner.
Place zucchini and squash onto the skewer then tomatoes and repeat this process until the skewer is full.
Seasoning for grilled vegetables skewers:
For this recipe, we’re using butter, garlic and pepper to season the veggie kebobs.
Melt butter and mix in pepper and minced garlic. Stir well.
You can buy pre-minced garlic or you can mince garlic like in the photo below. You’ll need about 5 garlic cloves for this recipe if you’re mincing it yourself.
Heat grill to 350F or if using a charcoal grill, wait until the flames die before cooking.
Brush Vegetable Skewers with some of the garlic butter.
How long do you cook vegetable skewers on the grill?
Lay Vegetable Skewers onto indirect heat on the grill and grill for 25 minutes.
Brush with melted garlic butter mixture every 5 minutes.
Once the vegetables are tender but still a little crisp they are ready to be served.

Ingredients
- 4 yellow squash, sliced into rounds
- 4 zucchini, sliced into rounds
- 7 roma tomatoes, cut into quarters
- 3 tablespoons minced garlic
- 1/2 stick of butter
- 1 teaspoon pepper
- 6 skewers - soaked in water
Instructions
