We started grilling corn like this when we lived in North Carolina while BigBear was stationed at Camp Lejeune.

Our first summer at Camp Lejeune is somewhat of a blur. We moved into base housing, I got a job with DirecTv, I made a few friends, was adjusting to married life, had a few mental breakdowns and I was smitten with the fact that I lived 15 minutes from the ocean.

Yep, I was back and forth between super happy and super sad that entire summer. At the end of that summer we moved into a brand new house with a huge yard and a backyard deck. I went out and bought BigBear a grill for his birthday that year and we made a habit of grilling and eating dinner on the back patio.

That’s when this Grilled Corn with Herb Butter showed up.  I don’t remember where I learned it from or why we started grilling corn like this but when ever I think about grilling corn in the husks, I’m immediately transported back to our sweet little home in NC and us standing out on the back deck grilling steaks and corn. Oh how I miss being there.

The next summer, our grill sat on the back deck, with a cover over it. I maybe used it twice. BigBear was in Iraq and I didn’t feel comfortable grilling by myself.

Once or twice I used the grill when my parents came down to visit me but other than that, it sat covered waiting for BigBear to come home.

That was when I started making this Grilled Corn with Herb Butter in the oven. Since I still loved corn on the cob but didn’t want to risk burning my new house down (because at the time I was still learning how to cook and grilling hadn’t made it into my lessons yet haha), I started cooking this in the oven.

So I just wanted to throw that in there because I know some of y’all might be nervous about grilling or some of y’all might not have a grill.

Have no fear. This Grilled Corn with Herb Butter can be made on the grill or in the oven. (However if you can find a way to grill it, I suggest going that way)

Speaking of finding a way to grill….

I need some grill recommendations.

We’re in the market for a new grill and I’m just not sure of what kind to get. I love both gas and charcoal grills….Big Bear loves one or the other…depending on what kind of mood he’s in. 😉

Right now, the only grilling we’re doing is on a little itty bitty camping grill that I bought for my dad for like $5 at a Party Store when we lived in NC.

It’s an awesome little grill and to be honest, it’s perfect when we’re just cooking for the two of us. But, if we’re going to be grilling for more than just BigBear and I we’re gonna need something a wee bit bigger.

So if you’ve got any grill suggestions for me, let me know!

Ok, so for the Grilled Corn with Herb Butter, you can really use any type of butter you want.

For these, I mixed soften butter with Herbs de Provence, Garlic power and smoky paprika!

I’ve also made it before by mixing softened butter and Italian seasoning mix!  I just whipped up a quick seasoned butter for ours, but play around with your favorite spices and find a butter that works for you!

Grilled Corn with Herb Butter Recipe

  • Prep Time: 15m
  • Cook Time: 30m
  • Total Time: 45m
  • Serves: 4

Ingredients

  • 1/2 cup butter (1 stick), room temperature
  • 1/2 tablespoon Herb de Provence
  • 1/2 tablespoon garlic powder
  • 1/8 teaspoon smoky paprkia
  • 4 -6 ears of corn in the husks

Instructions

  • In the bowl of a mixer, combine the butter, Herb de Provence, garlic powder, and smoky paprkia. Mix until combined.
  • Peel the husks back on the corn.
  • Spread the herb butter over the corn kernels.
  • Pull the husk back up, covering the corn.
  • Place on the grill over low heat (white coals). Cover and cook for about 30 minutes or until corn kernels are tender!
  • (You can also cook these in the oven, on a baking sheet at 350F for 30-45 minutes)

    Looks so yummy and so easy to make…I’m from N. C. and I miss everything about it. The foods you can only get in the south, stew you can buy by the quart in the fall and I can go on and on????…Thanks for sharing your recipes and finds.????
