You know, pregnancy is a weird beast. I’m officially 18 weeks pregnant this week and I’m just now starting to feel semi normal. As some of you know it took us over 10 years to get to this point and I have had a while to think about what I was in for. However, I don’t think you can really know until it’s happening.
For instant, I thought that when I was pregnant that I would be “eating for two” and want all of this awesome food. WRONG. I may be eating for two but you know what, I can’t really eat that much.
I have to enjoy super tiny meals.
I also thought that I would be one of those ladies that craved sugar and sweets.
Nope.
I crave fruit and veggies. I have been eating more carbs than normal, but not because I crave them, just because they do well on my stomach.
But I want all the fruit, all the veggies and I want tiny little bite sized meals like these Hummus Cracker Bites.
Oh and let’s talk energy…yeah, I have none. Nada, zip, zero. I’m running on 0% mmm 100% of the time. haha
All I want to do is nap and snack. No large meals or endless amounts of energy here.
So THANK GOODNESS I’m craving healthy snacks because I just don’t have the energy to put a lot of work into my cooking or into my food right now. I’ve got my fingers crossed that soon I’ll start to get a little energy back but until then, I’m loving little bites like this.
I’ve had quite a few fruit and veggie plate with hummus cracker bites as meals over the past week.
I have a feeling that I’ll be continuing that tradition for a while.
Plus I love the fact that the baby (who we’ve nicknamed Dot) and I are getting lots of plant based nutrition from these healthy snack plates.
While I’m always loving the fruits and veggies on this #UnofficalMeal plate, I also love these little hummus cracker bites. Let’s talk about those for a second!
I make these with gouda flavored crackers and Sabra Roasted Pine Nut Hummus!
I used the Sabra Roasted Pine Nut Hummus for these little bites but you could really use any type of Sabra! I bet the roasted garlic would be fantastic!
Just spoon a little of the Sabra hummus onto the cracker, add a few of the toppings from the hummus, dash on a few dashes of your favorite hot sauce, sprinkle on a little parmeshan cheese and that’s it!
So you’ve got little cracker hummus bites to munch on and then you’ve got crispy veggies to just dip with if the mood hits.
