December 1st is here!! All restrictions about decorating for Christmas “too early”can be totally throw out the window and those Christmas Trees, Candy Canes and Gingerbread Men are free to come out to celebrate!
Thanksgiving is over and that means that I can now embrace the Christmas spirit without the fear of someone telling me that I’m going to hell for skipping over Thanksgiving. Don’t get me wrong, I LOVE Thanksgiving and I’m very thankful for everything I have but to me, the Christmas season actually makes me more thankful for everything (and feels my heart with more love) than that one day in November that’s set aside for being Thankful and eating Turkey! I’m counting my blessing even more during the Christmas/Holiday Season.
Big Bear actually wanted to put up our Christmas tree yesterday but after the week/weekend we had, we decided to wait until next weekend to put it up. After all, we do get a real tree and I am a little nervous about putting it up too early. I don’t want it to be completely dry and dead on Christmas day haha. But now that I think about it…I don’t know if that would even matter since they’ve already been cut and have been sitting on the Christmas tree lots since before Thanksgiving.
Dangit, we should have just gone and got the stinkin’ tree yesterday. Oh well. At least I’ll have time to clean up the house a bit and make space for it in the living room. (Insert sad trombone here haha)
But let’s move onto something that will cheer me up!
So now that we’re all into the Christmas season, it’s time to get into the kitchen and whip up some homemade goodies! Because, let’s be serious…I know a TON of people that would love to have a box of these Homemade Chocolate and Caramel Pecan Turtles delivered to their door.
(Unless you’re like my best friend, Nikki, and you’re allergic to Pecans…if that’s the case, I’m going to need you to back away slowly. I’m also super sad for you because these little beauties are delicious.)
What you’ll need for Homemade Chocolate and Caramel Pecan Turtles:
You’re going to need:
Chocolate (I used the Food Lion Brand Candiquik)
Pecans (I used Fisher)
Butter (I used Kerrygold)
Caramel (I used the Kraft Caramel Bits)
& Sea Salt (Optional)
How to make Homemade Chocolate and Caramel Pecan Turtles :
First you’re going to need to toast the pecans. Lay the pecans out on a sheet tray and brush them with about 2-4 tablespoons of melted butter.
Heat the oven to 350°F. After the oven has reached 350°F, stick the tray of pecans into the oven and toast them for about 5 minutes. *don’t let them burn*
Remove from oven and let cool.
Melt the chocolate according to the package directions.
Melt the caramel according to the package directions.
Spoon a teaspoon of chocolate onto wax paper or onto a Non-Stick Silicone mat.
Top the Chocolate with 4 pecans, in the shape of a cross.
Add another pecan to the center.
Spoon a tablespoon of caramel over the middle of the pecan cluster.
Top the caramel with chocolate.
Sprinkle with a small amount of sea salt.
Let the chocolate sit until it has hardened (about 10 minutes or so).

Ready to make Homemade Chocolate and Caramel Pecan Turtles for Christmas? This recipe for Turtles is super easy and they are always a hit for Christmas gifts!
Ingredients
- 120 Pecan Halves (about 1.5 - 2 cups)
- 2 -4 tablespoons butter, melted
- 24 ounces Chocolate (I used the Food Lion Brand Candiquik)

I can’t wait to make these I am so excited but I have 1 question can I use reg either milk choc or am I sweet chips and if so how do u suggest I melt them should I use just the choc and melt or add shorting …. I dnt wanna mess it up thanks god bless
You can use regular chocolate chips however I love the Candyquick or Wiltons melting chocolate wafers for projects like this. If you want to use regular chocolate chips you need to melting 1 cup chocolate chips with 1 tablespoon + 1 Teaspoon of shortening. You can melt them together using the double broiler method or in the microwave in 30 second burst, stirring after each until melted and smooth.
You don’t just “blob” the ingredients together, you arrange it! You take time and care. This is why yours look so good. But I’m sure they don’t stick around long!

How far in advance can these be made, and what is the best way to store them?
I’ve made them up to 2 weeks in advanced and they are best kept in a air tight container at room temperature.
