A spoon and a bowl of cool whip is all I need to enjoy this homemade strawberry sauce. I mean really, I could probably just eat it alone with a spoon but the whipped topping makes me feel a little better about just eating strawberry sauce from a jar. haha.
I love a good strawberry sauce but let me tell ya something…homemade strawberry sauce is where it’s at y’all. Oh it’s so good.
Mom loves Strawberry Shortcakes, so back on Mother’s Day, she wanted Strawberry Shortcakes with the little cakes and strawberry sauce. I took on the role of dessert and while I did buy the little cakes (because new mom here! Store bought is what I’m going with haha), I decided that a dessert to celebrate my mom and to celebrate my very first Mother’s Day that I wanted to make my favorite vanilla strawberry sauce.
It was a great decision. haha.
I know it’s been a while since Mother’s Day and I’m just now sharing this recipe with y’all, but that’s ok. This isn’t a Mother’s Day recipe, I just happened to take it photo back in May when I made it for Mother’s Day.
Oh, I mean it’s great for Mother’s day…but not only for Mother’s day. haha
I mean, come to think of it, Mom’s Birthday is tomorrow. I could make some more! haha
It’s actually perfect for anytime during the summer. Just think! You can pour this over ice cream, homemade milkshakes, banana splits….oooo so many things! You’re going to LOVE this recipe so much!

Wow. What a reminder of many happy days in the home of my youth. When strawberries were in season, my mom always made strawberry shortcake. She bought whipped cream and those little sponge cake cups at the store, and used this sauce to make the dessert. I still do it for my family today. In my mind, this just cannot be beat. I would call it comfort food to the extreme.
What a coincidence!. I.just made strawberey sauce today for the first time. I made no churn neopolitan ice cream this morning. i have caramel sauce & chocolatw sauce. I also wanted stawberry because i want a banana split lol. I had some left over strawberries from the ice cream making. So i made some sauce. Your recipe sounds fabulous!. I will be using your recipe next time!. Thanks for posting it. ☺

I was wondering how long does it last? If I needed to make 70 shortcakes I’d this something I could make a few days before?
That should be totally fine. I’d say that It would last about 2-3 weeks in the fridge. Mine made it about 2 weeks before we ate it all last time.
This is the only recipe i found that uses butter. Can anyone enlighten me what the butter does? Im afraid it would harden the sauce in the fridge.
The butter reduces the foam when you’re making it. It doesn’t harden the sauce in the fridge. 🙂
I noticed that you said the butter was so it doesn’t foam while cooking. Then, why is it added at the end? Just curious. Trying this today. Thanks!
It reduces the foam at the end so you don’t end up with a ton of foam going into your jars of strawberry sauce 🙂
Just made a double batch of this after picking 10lbs of berries, it’s so good I’m making another batch so I can bring it into work to make shortcakes. Question, what if I add blueberries and raspberries with the strawberries to make a berry sauce? Just wondering if you’ve tried making it with other berries?

How many shortcakes will this serve?
Hi Kara,
This recipe makes 3-4 cups of sauce (depending on how big the strawberries are and how long it reduces, etc). The amount of shortcakes will depend on what size shortcakes you are using and how much sauce you want on each one. If you want about 1/4 cup of sauce on each cake, this will cover about 12-14 shortcakes.

Could this recipe still work if I don’t have a lemon? What does the lemon do?
Natural pectin is super low in strawberries but high in lemons, so the lemon juice helps the sauce thicken to a syrup instead of like a strawberry juice.

Hi Cindy! You can add a bit of cornstarch to it while it’s boiling (maybe a tablespoon or 1/2 a tablespoon) and stir it while it simmers to thicken it a bit. 🙂
This sounds delicious! I am making Strawberry right now, but think I will try Marionberry tomorrow! I know fresh is best, but do you think you can use frozen?
Hi Sherry, I’ve never made marionberry sauce but since they’re like blackberries, froxen may be ok but you may need to cook it longer because there is more liquid in frozen berries.
Thank you so much for this recipe. I didn’t have fresh strawberries but used frzn, slightly thawed wild blueberries and DID add a 1/ 2tsp cornstarch to thicken it a bit. I was looking for a fruity sauce that could top homemade Blueberrry pancakes & wasn’t happy w/ what was out there. This recipe filled the bill perfectly!!! Couldn’t thank u enough!
