I grew up in east Texas in the 50 and 60's. My nana always made fried green tomatoes in the fall, as the weather was changing. When a frost was on it's way she would pick all the green and partial colored tomatoes, wrap them in newspaper and put them in a cool but frost and freeze free location. They would gradually ripen some and we had fried green tomatoes until almost Christmas. What a treat. They are also good with some peppery spice in the cornmeal and made into a grilled cheese sandwich. Thanks for some happy memories and a great recipe. xanadu.

In reply to <a href="https://www.bigbearswife.com/how-to-make-fried-green-tomatoes/#comment-12244">Bill</a>.

Hi Bill, the little green specks are pieces of fresh parsley that I sprinkled on it before photos just because it needed a little color before photos. The garnish with chopped parsley is totally optional. The tomatoes should be soft after frying them :)

I see green specks in several pictures.
But nothing in the ingredients. Are they
chives?
Also, is the tomatoe supposed to be soft
when cooked or still firm?

Hi Sue! Without being there with you I can't tell you what exactly went wrong. However, I would suggest turning the heat down a bit a maybe frying up 3-4 at a time instead of 2-3. Sometimes people's stoves and oven heat differently. If I were troubleshooting this in my kitchen I would reduce the heat and cook them longer.
