Hey! You can certainly make this rice without an instant pot! I haven't made this particular rice without using the instant pot only because I was working on adding more Instant Pot recipes for the blog. If I were going to make this Cilantro rice on on the stove, I would do it something like this:

Fresh cilantro leaves only (about 10 sprigs), finely chopped
2 cups long grain white rice
4 cups of water
2 limes
1 tablespoon of garlic powder
1/2 teaspoon of salt
1/2 teaspoon of pepper

Rinse rice until water runs clear.
In a large skillet, melt butter and add rice to skillet.
Stir and cook rice until toasty and lightly golden, about 10 minutes.
While rice is toasting, whisk water, zest and juice from one lime, garlic powder, salt and pepper.
When rice is toasted, add water mixture.
Bring to a boil and stir well.
Reduce to a simmer and cook for 25-30 minutes*, covered, until water is absorbed.
Fluff with a fork, taste for seasoning. Add juice from 2nd lime if needed and stir in chopped cilantro.

I'm basing this off of my favorite homemade Mexican Rice that we love

Greetings Angie.
I hope this note finds you and yours in good health and spirits.
Just a quick question about the Cilantro Lime Rice and The Instapot. .
I have a slow cooker and I have a whole bunch of pots. But unfortunately none of the have the capability of being instant.
Does it really matter what kind of pot it is cooked it? I don't mean to sound mean or anything, but for those out there that might be wondering . . .
We consume a lot of rice, Asian and Mexican dishes, and I make sushi once a week. So for me it is not a problem. But I have come across this question on every recipe site that I pass over.
You are a beautiful woman and an awesome cook and those with the
Instapot question would rather hear from you that "yes, you can still make this rice with a regular old pot", than from some online kook like me.
I thank you in advance for this recipe as my son will now make it because you are not his mom*.
ps lemon lime cilantro rice
 is just as awesome.
