My husband is the reason that I started cooking. Before I met him, if it wasn’t pre-packaged or togo, I probably wasn’t going to eat it. I didn’t have time to cook, I wasn’t going to start cooking just for one and it was just easier and more acceptable for my friends and I to go out to eat or run to a fast food place together.

But now I spend my time reading cookbooks, watching cooking shows and videos and trying new recipes all  of the time. I love being able to relax and create something wonderful in the kitchen that makes my husband smile. Makes my heart smile to see him smile like that. And since he loves potatoes, these Loaded Potato Skillets really made him smile. These are what came from me reading over the TGI Fridays Menu. They have some kind of appetizer that is skillet cheese potatoes, or something like that. I have not had it, but I liked the description, so I went with the description to make these.  Just like loaded cheese fries but with chips. Oh and baked chips.

 

I’ve fallen in love with baked chips lately. It makes me feel better about eating something if it’s baked and not fried. Like wings! I started making wings in the oven and they’re just as good if not better then fried wings.
Now with the bacon and cheese all over these, I’m not saying these are good for you haha. Because they’re probably not. But then again I don’t really expect anything that starts with “loaded” to be to good for you 😉 Not that that should prevent you from trying this. Just remember, everything in moderation hee hee 😉
 

Healthy? Probably not. Delicious, cheesy, potato goodness? Yes, Please!

Loaded Potato Skillet

Loaded Potato Skillets

  • Yield: 2 Mini Loaded Potato Skillets

Ingredients

  • 2 large russet potatoes
  • 1 cup shredded cheese
  • 1/4 cup bacon bits (I bake bacon in the oven and then chop it)
  • Salt and Pepper
  • Olive oil
  • Chopped parsley (optional)

Instructions

  • Using a mandoline or a very sharp knife, slice potatoes into thin chips. Pat slices dry with a paper towel.
  • In a large bowl toss potatoes with 2-3 tablespoons of olive oil. Lay out in a single layer on a cookie sheet (may need 2 cookie sheets).
  • Sprinkle with salt and pepper. Bake for 10-14 minutes. Checking on them close to 10 minutes, don\'t let them burn.
  • Remove from oven and place on a wire rack.
  • In two single serve cast-iron skillets, (or 1 large one), begin with one layer of baked potato chips. Sprinkle with cheese and bacon bits. Add another layer of chips. Sprinkle with cheese and bacon bits.
  • Add another layer of chips and sprinkle with the last layer of cheese and bacon bits. Place the cast-iron skillets into the 425F oven for about 5-6 minutes or until the cheese melts. Remove from oven. Careful, skillets will be very, very hot.
  • Sprinkle with chopped parsley.

    This sounds very good and I am looking forward to trying it. I am just wondering though about what temperature to have the oven at…you say to preheat to 425 degrees at the beginning of the recipe and further in the instructions you say to put the skillets into a 450 degree oven. Which is the correct temperature?
