Classic Sweet Cherry Pie

  • Yield: 1 (9 inch) cherry pie

Ingredients

  • 1 box refrigerated pie crusts, softened (two crusts total)
  • 1/4 cup Dixie Crystals Extra Fine Granulated Sugar
  • 1 1/2 cups water
  • 4 cups sweet cherries, pitted
  • 2 tablespoons honey
  • 1/4 cup cornstarch
  • Whipped Cream for topping (optional)

Instructions

  • Preheat oven to 425F.
  • Add cherries, water, honey, and 1/4 cup sugar to a medium sauce pan.
  • Bring to a boil, reduce to simmer. Let simmer 10 minutes, stirring occasionally.
  • Stir in cornstarch. Simmer 5 minutes, stirring occasionally. Remove from heat, let cool.
  • Roll out first pie crust and lay it into a 9 inch pie dish.
  • Carefully press the dough to fit the pie dish.
  • Fill the crust with the cooled cherry pie filling.
  • Roll out the second pie crust and cut the pie crust into 1 inch strips.
  • Use the pie crust strips to make a lattice top on top of the pie.
  • Bake for 45 minutes.
  • (After about 15-20 minutes you may want to remove the pie and carefully wrap foil around the edges so that they don\'t burn)
  • Let Cool.
