Are we all super excited about the recipes that are getting ready to pop up on the blog?
Southern Foods that we all love are coming atcha!
I mean they may not ALL be “traditional southern” however a lot of those will be showing up to the party too!
I’ve been throwing around a little idea and I’m going to work on “working it into” the blog. I’ve been taking a little more “me time” lately and catching up on some of my favorite cooking shows like The Pioneer Woman and Trisha’s Southern Kitchen on Saturday mornings and while I was watching Trisha’s Southern Kitchen the other day, I thought to myself,”I love this show, I love it because I get to see her life, her family and her friends. I get to see her having fun and she makes me want to get into the kitchen and I also love the themes of her shows!”
Themes! Cooking shows have them all the time. You know, “Bacon Breakfasts” or whatever and they’ll share like 3 recipes with that theme or something. It pulls you in and makes you want to see what all they’re whipping up!
Well the other morning, Trisha did a “Steel Magnolias” themed show and I fell in love with every single recipe and thought “why don’t I do that, why don’t I have themes on the blog?”
So that’s what I’m going to work on. I’m going to work on giving the blog weekly themes and we’ll see how long they last haha.
This week is going to all about “Picnic Foods/Summer BBQ Dishes”….you know that in the south we can have BBQ’s without actually eating BBQ right? haha 😉
Today I’m kicking off this week of “Picnic Foods/Summer BBQ Dishes” with this Roast Beef Grilled Cheese! Later on in the week I’ll be sharing my Easy Jack Daniels Baked Beans and Chocolate Cherry Marshmallow Cheesecake Parfaits! All recipes that are great for picnics or BBQs!
We had the Jack Daniels Baked Beans and the Chocolate Cherry Marshmallow Cheesecake Parfaits yesterday during mom’s Mother’s Day Picnic so I KNOW they pack up well!
These Roast Beef Grilled Cheeses are perfect for enjoying on the back patio but they’re also great for packing up for a picnic at the park!
For these, I picked up some sliced roast beef from the grocery store deli just because I wanted the slices to be a little thicker but the pre-packaged roast beef would work as well.
I slathered them with the Stubb’s Smokey Mesquite but if you can’t find that just use your favorite BBQ sauce. I liked the Stubb’s smokey mesquite flavor and to be honest they had the best ingredient list out of all of the BBQ sauces that the store had.
I also decided to go with sesame seed buns for these grilled cheese sandwiches instead of plain white bread. I just wanted something a little different and the sesame seeds buns were totally the answer!

4 Roast Beef Grilled Cheese Sandwiches
8 thin slices Swiss cheese
4 tablespoons smokey BBQ Sauce (I used Stubb’s Smokey Mesquite)
Butter
DirectionsHeat a skillet on medium heat. I use my cast iron skillets for grilled cheese making!
Melt about a tablespoon (or half a tablespoon) of butter in the pan.
Toast the inside sides of the buns.
Assemble the roast beef sandwiches like this:
Top Bun
1/2 tablespoon BBQ sauce
2 pieces of cheese
1/2 pound sliced roast beef
1/2 tablespoon BBQ sauce
Bottom Bun
Melt about a tablespoon (or half a tablespoon) of butter in the pan.
Place 1 of the fully assembles sandwiches into the middle of the pan.
Heat for about 1 minute, maybe 1 minute and 30 seconds. It should be toasty but not burnt.
Flip the sandwich over so that the top bun it touching the pan.
Press down with a spatula.
Cover with a lid and cook for 1 minute, maybe 1 minute and 30 seconds.
Top should be nice and toasty and cheese should be melted.
Repeat with reaming sandwiches.
Serve hot!

Roast beef with BBQ sauce and cheese sounds like a perfect twist on a grilled cheese sandwich.
Now you totally have me craving a grilled cheese sandwich – and with roast beef added?!? Heaven!
I love this recipe so much. This is my kind of grilled cheese.
I love watching cooking shows as well and it’s true you get to see their lives which is what I lvoe! Love the idea of themes too! This burger looks fabulous and easy!

THIS IS MY KIND OF SANDWICH. I AM GOING TO ADD A WHOLE GREEN CHILI AND ONION STRAWS TO MINE. OR MAYBE I’LL ADD SAUTEED MUSHROOMS. I THINK IT WOULD BE GREAT ON THICK SLICED SOURDOUGH BREAD OR TEXAS TOAST.
I make roast beef toasted cheese occasionally, but I’ve never thought about adding BBQ sauce. I’ll definitely have to give that a try next time! So yummy looking! 🙂
