This was one of the very first recipes that I ever made on my own. Well, I suppose a version of this recipe was one of the first since I use to make this on the stove and now it’s been turned into a Slow Cooker recipe. 🙂
Now I didn’t really start cooking until after I got married but I started collecting recipes way before that. I may not have been working my tail off in the kitchen back then but I still knew that once I got married that I wanted that perfect housewife job, apron tied around my waist, cooking amazing meals for my family! (Yes, I do plan for the future haha, I started buying stuff for my future house when I was like 15) haha
Beef and Vegetable Soup was one of those recipes that I picked up and stuffed into my recipe binder for the future, but actually ended up making it a few times before I even met BigBear. haha BUT it was pretty much the ONLY thing I ever cooked before we got married.
When I moved out of my parent’s house, I moved into this old rock farmhouse with a girl named Sarah that waited tables with me at Rockola. We literally lived in the middle of nowhere (there were only like 3 houses on our road!). With a 45 minutes ride into town, we really didn’t make too many trips out and about haha.
But even though we were out in the middle of the country, I was actually pretty close to my Nana’s house! I made sure to drop by there a bit, especially when my mom would come up to visit!
During one of my visits, my aunt Sandra made Beef Vegetable soup for dinner and I loved it so much that I had to have the recipe. She wrote it down for me and the next night I was in town, for work, and I made a stop by the store to grab everything that I needed.
I made a HUGE pot of this soup and divided it up into 1 cup servings and froze them. I literally stocked our whole freezer with Beef and Vegetable Soup…it sat perfectly beside the carton of Icee Pops. 😉
Since I’ve been on a mission to add more slow cooker recipes into my meal rotation I thought that this Beef and Vegetable Soup would be a perfect meal to make in my slow cooker!
I thought this soup was easy to make before but now that I make it in the slow cooker it’s 1000 times easier! I literally just dump everything into the slow cooker, turn it on and walk away!
That’s my kind of slow cooker meal. I love the slow cooker meals that are “dump and cook”. Isn’t that the whole purpose of a slow cooker? If I’m going to use a slow cooker I want it to do ALL of the work.
Side note- I did use canned vegetables but you could totally sub those for fresh or frozen!

this sounds so easy and so delicious. I may have to substitute hamburger for the stew beef as my husband recently had all his teeth extracted and is trying to learn to chew with dentures

Oh, you’re so right! – I come across so many slow cooker recipes that require a million steps before you actually put the ingredients IN the slow cooker. Doesn’t seem counter-productive. Love this soup!
I really do need to use my slow cooker more often and this soup recipe sounds like a good place to start. I love that the soup freezes well too.

Beef & Vegetable Soup and Icee pops! Sounds like a college freezer! This soup looks seriously fab. Dump and run is the only way to go with crock pot recipes.

I don’t 🙂 For this one I just throw everything in there and turn it on haha 🙂 But you could brown the meat before if you wanted to.
Can frozen vegetables be used, if so, when do you put them in?
hey! I’m sure they can. I’d just throw them in at the start 🙂 But I haven’t made it with frozen in a long long time. It should be fine though.
I am going to use this recipe as a guide and use either fresh or frozen veggies. Because of blood pressure problems we do not use high sodium canned veggies. Looks like it will be good.
Frozen Mixed Vegetables will work perfectly in this recipe 🙂
