So basically, Carrot Raisin salad taste like southern coleslaw without the cabbage. This is how you make it:
What you need for Southern Carrot Raisin Salad: (amounts in recipe)
- pineapple tidbits
- Dixie Crystals Extra Fine Granulated Sugar
- orange juice
For the orange juice, you can use fresh or bottled. I normally just use a fresh orange and then snack on the orange pieces. However, if you don’t have OJ and don’t normally drink it, you can use pineapple juice for that part instead since there are already pineapples in the recipe.
Picking Carrots for Southern Carrot Raisin Salad:
I like to use regular sized carrots for this salad because grating baby carrots can lead to grating fingers. So I opt for regular sized carrots for this project. However, you could use baby carrots if you wanted to use a grater attachment for a food processor.
You’ll need about 6 large carrots to grate for this salad recipe. Just give them a wash, peel them and grate them on the medium size of a grater.
Toss all of those lovely orange carrots into a big bowl.
Toss in all of the other items and give it a good mixing!
Now stick it in the fridge. This salad side dish is best served chilled, plus the time in the fridge lets all of the flavors marry together.
If you find that there is excess liquid in the bowl when it’s time to serve this salad, give the carrot mixture another few good stirs and then just soak any unwanted extra up with a paper towel.
Sometimes, depending on how long I let this side dish sit in the fridge, some of the liquid will settle into the bottom of the bowl.
