Since our goal is to not eat out as much as we use to, taking our lunches to work has been one of those areas that we’ve had to “work on”. It’s just so convenient to just run out and grab something (or have someone pick up something for the office) that’s already made and ready to be eaten during our lunch breaks.

Remembering to buy “lunch foods“, remembering to fix your lunch the night before, remembering to pack up your lunch, remembering to get it out of the fridge in the morning…. yeah most of the time I forget all of those steps.

Hopefully though that’s all going to change! Big Bear has started to get into the habit of remembering to take his lunch and I’m trying to get into the rhythm as well.

In order to keep with the rhythm of packing  my lunch more often I’ve been thinking of some creative and interesting lunch ideas so that I don’t get bored with the plain ol’ PB&J or Ham and Cheese sandwich.

*Enters the Oscar Mayer Deli Fresh BOLD Italian Style Herb Turkey Breast* – This Turkey is one of the things that’s going to keep my lunches interesting and delicious!  We’ve already used a few packages of this Deli Fresh BOLD Italian Style Herb Turkey Breast on sandwiches and BigBear even put some in his eggs the other morning and loved the flavor that it gave his breakfast!

Plus ya’ll all know that I’ve crazy about checking labels and whatnot on my foods now right? Oscar Mayer Deli Fresh BOLD lunch meats contain no artificial preservatives, no artificial flavors and are gluten free!

Since BigBear is the big sandwich eater in this house, I asked him for some input on what kind of sandwiches I should start making for lunch. I told him that I wanted to stay away from the boring kinds and needed some fresh ideas.

He suggested that instead of regular bread that we try a few sandwiches with these huge croissants! He normally just eats them plain for breakfast but thought they’d make a great bread for lunch sandwiches as well! Of course, he was right. 😉

Then I kind of threw my own twist into the mix. We had turkey and croissants but what else could we pile onto this sandwich to turn it into something I’d look forward to? Tomatoes! I’ve been on a tomato kick within the past year, as in I really, really love sandwiches that have tomato on them! So weird because I didn’t really care for tomatoes when I was younger!

OK, so we’ve got turkey, croissants, tomatoes….. ooohhh you know what goes well with tomatoes? Mozzarella cheese! Now I’m thinking, OK… tomato and mozzarella, we should make a caprese type sandwich!  Caprese anything is normally made up of tomato, mozzarella and basil! Well, I didn’t think biting into a sandwich with a bunch of basil leaves sounded very appetizing so I replaced the basil with fresh spinach leaves. But don’t worry; I didn’t leave out the basil!

I added basil and garlic to mayo to create a creamy spread for my Turkey Caprese Croissant!

To build the sandwich, cut the croissant in half and spread the basil garlic mayo onto each side of the croissant.

Add the Deli Fresh BOLD Italian Style Herb Turkey Breast to the bottom half of the croissant.

Top that with fresh slices of mozzarella cheese.

Top them with a huge slice of tomato!

Top that beautiful tomato with fresh spinach leaves, place the other half of the croissant on top of the spinach and you have just created one of the most beautiful turkey sandwiches ever!

Turkey Caprese Croissant Recipe

  • Yield: 4 Turkey Caprese Croissants

Ingredients

  • 4 large croissants
  • 1 package of  Deli Fresh BOLD Italian Style Herb Turkey Breast
  • 1 large tomato
  • 1 cup fresh spinach
  • 8 slices of fresh mozzarella
  • 1/4 cup mayonnaise
  • 1/2 tablespoon basil (or 1 tablespoon depending on your preference) 
  • 1 clove garlic, minced

Instructions

  • For the basil garlic mayo:
  • In a small bowl mix the mayonnaise, basil and garlic. Mix well and season to taste.
  • To build the sandwich:
  • Cut the croissant in half and spread the basil garlic mayo onto each side of the croissant.
  • Add a few pieces of Deli Fresh BOLD Italian Style Herb Turkey Breast to the bottom half of the croissant.
  • Top the turkey with 2 fresh slices of mozzarella cheese. Top the mozzarella with a huge slice of tomato.
  • Top the tomato with fresh spinach leaves and place the other half of the croissant on top of the spinach!

    Sandwiches on croissants are my favorite! In the summer I always serve chicken salad that way. This is such a tasty looking sandwich…yum! I would happily pack this for lunch.

    I don’t eat meat but if I did I would definitely be choosing preservative free meat! And organic too – I hear they put hormones in meat (unless you buy the organic ranges).
