Melted Witch Ice Cream - a homemade, creamy mint chocolate chip ice cream that is perfect for Halloween because it is topped with mini cookie witch hats!

Ingredients

Mini Witch Hats:

Chocolate Pieces for ice cream

  • 1 cup melted chocolate almond bark
  • 1 teaspoon coconut oil

Instructions

Mini Witch Hats:

Flip Fudge Stripe cookies over to chocolate side.

Use orange icing and pipe an icing blob on the center of the cookie.

Press a chocolate chip into the middle of the orange icing.

Chocolate Pieces for ice cream:

Melt chocolate almond bark according to package directions.

Stir in coconut oil to 1 cup melted almond bark until completely combined.

Spread chocolate and coconut oil mixture onto a sheet of parchment paper or a silicone mat.

Let chocolate harden for about 10 minutes.

Chop chocolate into tiny pieces and set aside.

Ice Cream:

Whip together the heavy cream, and powder sugar in a large bowl, using an electric mixer on high speed, until stiff peaks form, 5 to 7 minutes. Add in extract and a few drops of green food coloring. Mix until combined.

Gently fold in the sweetened condensed milk until incorporated. Fold in about 2 cups of the chopped chocolate bits.

Pour into a loaf pan and top with some chocolate bits. Add witch hats (or save them for serving!)

Freeze for several hours or overnight until frozen.

Notes

if you can't find Mint Chocolate Chip Extract, you can also use mint extract but DO NOT USE PEPPERMINT! It is not the same.
