Instructions

  1. Heat rice according to package directions and then pour into a large bowl.
  2. Drain corn and add to bowl.
  3. Stir in mayo and seasoning.
  4. Sprinkle in Cotija Cheese and stir
  5. Serve warm

Notes

  • The Traders Joes "Everything but the Elote Seasoning" is a combination of Chile Pepper, Parmesan Cheese, Chipotle Powder, Cumin, Cilantro and Sea Salt
  • Best if served when made, does not reheat well in my opinion.
