In reply to <a href="https://www.bigbearswife.com/german-chocolate-cake/#comment-58611">Mariah</a>.

Hi Mariah, I didn't use buttermilk because I don't use it a lot in my cooking and baking. Nothing wrong with it but I used this cake base with the oil because I knew it would produce a moist chocolate cake to hold the German Chocolate Cake Coconut filling. A German Chocolate cake doesn't have to be made with buttermilk. I know there are some recipes out there that use buttermilk but that doesn't make them "authentic". German Chocolate cake isn't even from Germany. It comes from America and got it name from an American chocolate maker named Samuel German. He created a baking chocolate that became popular for making German chocolate cakes. It was originally called German's chocolate cake. According to Wikipedia, a German Chocolate Cake is just "a layered chocolate cake filled and toped with a coconut-pecan frosting." If someone is making an "Authentic German’s Chocolate Cake" using buttermilk and German's Sweet Baking chocolate, then they are probably sharing the recipe created by Mrs. Clay in 1957 that she named "German’s Chocolate Cake". Buttermilk was popular in the 1950s in baking so I'm guessing that is why she used it in that recipe. :)

Hi, just curious how come you don’t use buttermilk in your recipe? I see you use oil as well. Is that because you opted not to use buttermilk? I see so many “authentic “ recipes that call for buttermilk and also use German chocolate instead of cocoa powder. I’m just trying to find the best recipe for my dads birthday and want a moist cake. I know using the oil will probably produce a more moist cake than the buttermilk. So is that why? Thanks for your help!

No it isn't. German Chocolate cake was invented in the 50s by a lady in Texas and the original recipe calls for boiling water. A lot of people add coffee to German Chocolate cakes and Chocolate cakes in general to amp up the chocolate flavor but it IS NOT one of the original ingredients..... Just Sayin…
