When is it going to start getting warm around here?! Today is a cold, rainy day and I don't like it. I"m ready for a little sunshine and warmer temperatures. Thankfully our new house has heat though haha, so at least we can stay a little warm inside.

And while we're staying cozy inside, I'm also warming up the kitchen with lots of soups, stews and hearty meals. This Bacon and Shrimp Bisque is becoming a new favorite around here. It's got the wonderful shrimp flavor that I love and it's got lots of crisp bacon for BigBear.

For #SundaySupper today I want to share this with you. It takes a little bit of time to make, but it's totally worth it. Well, to BigBear and I it's worth it. :)

He had a huge bowl of this for lunch today and loved every bite.

To make this bisque:


Preheat oven to 425F.

Lay bacon out onto a baking sheet (one with edges).

Bake bacon for 15-20 minutes or until done. Let cool and then chop into bacon bits.

Heat oil and butter in a large skillet. Add chopped leeks and stir. Cook for 10 minutes.

While the leeks are cooking, fill a stock pot with the seafood stock. Add in the bay leaf and shrimp shells. Simmer for 15 minutes. Strain and then add the liquid back to the pot. Discard the shells and bay leaf. 
After the leeks have cooked for 10 minutes, add garlic and stir. Cook for 2-3 minutes. Add shrimp and cook until shrimp are done. (Shrimp will turn pink and curl up when done)

Pour leeks, shrimp and garlic into a bowl and set aside. 
To the skillet, add 1/4 cup butter and melt. Add 1/4 cup flour. Whisk until smooth, cook while whisking for 2-3 minutes. Add half and half. Whisk until thickened. 
Add the half and half mixture to the stock. Add water, dry sherry and tomato sauce. Whisk.
Bring to a boil and reduce to a simmer. 
Puree the shrimp, leeks and garlic and add to the stock. Add bacon to the stock. 

Simmer for 30 minutes, occasionally whisking the bisque as needed.

1 pound shrimp, deveined and peeled (keep the Shells)
4 cups seafood stock
4 tablespoons olive oil
2-4 tablespoons butter
2 cups chopped leeks (1 leek)
3 cloves garlic, minced
1/4 teaspoon old bay or seasoning salt
2 cups water
1/4 cup dry sherry
1 bay leaf
1/4 cup butter
1/4 cup flour
2 cups half & half (1 pint)
6 oz tomato paste
Salt and Pepper to taste
1 pack bacon
