Sweet Potato Pie with a Honey Pecan Crust #OurOctoberChallenge

October has danced by in a flash and November will be in just a few days, How quickly time is passing by. Summer days are gone and the months of everything pumpkin and autumn related are here. The season of fall colors, sweaters, and pumpkin pie is upon us! (oh, well don’t forget the sweet potato pie)
Do you know hard it is to think about pie when you’re on a 30 day eating clean challenge? It’s rough. haha. All I want to do it eat a giant slice of sweet potato pie or chocolate pie or pecan pie! Hello who’s having ice cream for breakfast on Halloween aka the end of my challenge? This girl!

Well probably not but it’s nice to think like a rebel once in a while. Plus I’m an adult so ice cream (or pie) is completely acceptable for breakfast. Right? 😉
In my attempt to make a clean eating/healthier sweet potato pie that BigBear would enjoy I rolled out with  this Honey Pecan Crusted Sweet Potato Pie. Yeah, the name is kind of long but I didn’t want to just call it a “Sweet Potato Pie” because well it’s not just a normal sweet potato pie.
I used honey and pecans to make the crust for it and I used honey, vanilla almond milk and coconut sugar to sweeten it up a bit. A bit different from the normal, baked pastry crust and white sugar loaded sweet potato pies that I’m use to.

I also added some chopped nuts to the top because since my best friend Nikki is allergic to nuts I like to make it known that certain foods I make have nuts in them by using the pecans as garnish. Better safe than sorry. Plus they tasted pretty darn good with the sweet potato pie.
I read a post on Facebook the other day that was asking if Sweet Potato Pie needed to be sweet or savory. I have always been use to them being sweet, but I saw that a few people said “savory”. What’s your preferance? Do you like a “sweet” sweet potato pie or a savory one?
This sweet potato pie has a bit of sweetness but I feel like it’s got more of a savory taste. Or that could be because my taste buds are normally use to being loaded down with sugar 😉

Sweet Potato Pie with a Honey Pecan Crust #OurOctoberChallenge

Ingredients

For the crust:
1/2 cup honey
2 cups pecans
Extra pecans for garnish**optional

For the pie:

3 large sweet potatoes, peeled and cubed
4 tablespoons honey
1 cup almond milk
2 teaspoons cinnamon
2 teaspoon nutmeg
1/3 cup coconut sugar
2 tablespoons vanilla

Instructions

For the crust:

Preheat oven to 350F.

In a food processor combine 1/2 cup honey and 2 cups pecans. Pulse until the pecans have become small crumbs. Press into a pie dish to form the crust.

Bake crust for 7 minutes. Remove from oven and set aside.

 

For the pie:
Bring a large pot of water to a boil. Add in the sweet potatoes cubes and cook for 15-20 minutes or until sweet potatoes are fork tender.
Drain sweet potatoes. Return sweet potatoes to pot and and mash with a potato masher or a fork.
Mix in honey, almond milk, cinnamon, nutmeg and coconut sugar. Mix in vanilla.
Pour into the pie crust and bake at 350 for 1 hour.
Let cool for 1 hour. Top with chopped pecans

Yields: 1 sweet potato pie, about 8-10 servings
