Can you really get tired of Blueberry Muffins? I absolutely love them and I really love the amazing smell that they send floating through my home when they’re baking in the oven.
We can’t seem to keep blueberry muffins in the house. Last weekend I made four batches of fresh blueberry muffins and I think I had two left by the time Monday morning rolled around. As soon as the word got out that I had fresh blueberry muffins in the kitchen, everyone wanted some of them.
I can’t tell them no! I just can’t. I like to share what I bake, so that landed me with two muffins and the need to bake more. 🙂
Thankfully I still have some blueberries (froze a bag of them) from when I got some from my neighbors blueberry bush and this recipe is simple, so I can whip up a new batch in no time. Ps. until then if you see any blueberry muffin candles anywhere please let me know! I love that smell!
I probably won’t get to have any of these anytime soon though because on Friday (yesterday really, if you’re reading this on Saturday), I have an appointment. to have my wisdom teeth removed. So probably, as you’re reading this, I’m doped up on pain medicine recovering from getting my wisdom teeth out. *Send Pudding!*
But I may be a sweet wife and whip up a batch of these before my appointment so that BigBear and my Mom can have a little snack while they baby me. *yeah, I’m a huge baby and plan to use my pain meds… alot!* haha 🙂

2.5 cups flour
2.5 teaspoons baking powder
1 teaspoon salt
1 1/8 cups sugar
2 eggs
1/4 cup melted butter
1/4 cup oil
1 cup milk
1.5 teaspoon vanilla
Instructions
Pre-heat oven to 350F.
Rinse blueberries and lay out to dry on a paper towel.
Mix flour, baking powder, and salt in a large mixing bowl. Gently stir in the rinsed and dry berries.
In another bowl, mix eggs and sugar till thick. Add butter, oil, milk, and vanilla. Fold into dry ingredients.
Fill muffin cups lined with paper liners 3/4 full.
Bake for 20 minutes.
Yields – 2 dozen muffins
