Frozen Strawberry Vanilla Yogurt Bites

Frozen Strawberry Vanilla Yogurt Bites are perfect for those hot summer days! A refreshing and easy fruit snack for adults and kiddos!

 

I’m an impulse buyer. It’s a bad habit. I’m especially bad when it comes to clearance items and fruit.  With clearance items, I normally justify the purchase with “look how much I saved” or “I’ll totally need this next Halloween, Christmas, Easter (whatever the holiday) and it’s only $2.00. With fruit, I justify my massive fruit splurges with “It’s healthy and good for me” or “We need more fruit in our diet”.  Both of these “justification” end with me buying a ton of stuff only to get home and regret my decisions. Only because I have no where to  put the stuff I already own haha and then I’m stuck with trying to figure out where to put the new stuff.

The problem with me buying a tons of fruit at one time is that I’ll be on a fruit kick for about 3 days, and then I’m not interested in it anymore, and I’m stuck with a ton of fruit that needs to be eaten. Big Bear will eat the cantaloupe if I bring that home and sometimes he’ll munch on pineapple, but the strawberries, mango, bananas and apples….he doesn’t touch them.

 

When we went to Sam’s Club the other day, I stocked up mango, whole pineapples, sugar melons, and strawberries. After eating a lot of the strawberries, I still had a lot left overs and I was looking for ways to use them up. Hubby wanted smoothies which gave me the idea to make “smoothie freezer bags. ( chop up bananas, strawberries and add them to a bag with frozen yogurt, next time you want a smoothie, just pour the bag of frozen fruit into a blender, add a little milk or OJ and blend)

 

While I was thinking about that, a picture popped into my head that I’d seen a while ago, that involved freezing strawberries in yogurt. I don’t know how they did theirs as I only saw the picture but this is how I did mine.

 

For smaller bites, dice strawberries and add them to an ice cube tray with vanilla yogurt. Freeze for 2-3 hours. Pop out and enjoy. For the whole strawberries, spoon a little vanilla yogurt into a silicon cake pop or brownie pop mold. push strawberry into mold. Freeze for 1-2 hours, pop out and enjoy.

Frozen Strawberry Vanilla Yogurt Bites

Ingredients 
  • Strawberries, whole or chopped
  • Vanilla yogurt

Directions

For smaller bites, dice strawberries and add them to an ice cube tray with vanilla yogurt. Freeze for 2-3 hours. Pop out and enjoy.
For the whole strawberries, spoon a little vanilla yogurt into a silicon cake pop or brownie pop mold. push strawberry into mold.
Freeze for 1-2 hours, pop out and enjoy.
**add pineapples and bananas for a great treat**
