Happy Monday, Y’all! This week on the blog we’re celebrating all things “Back to School” because I’m participating in an online recipe event called #BacktoSchoolTreats that’s all about wonderful treats that are perfect for kids and adults as everyone gets ready to head back into new school year.
My first recipe for the event? Caramel Apple Back to School Cupcakes! Plus there is a HUGE giveaway at the bottom of this post!
These tasty cupcakes are perfect y’all! They would be great for an after school snack or maybe dessert after dinner before the first day of school. They’re filled with an easy caramel apple pie filling and decorated with easy DIY apple sprinkles!
Yes! DIY apple sprinkles haha, I’ll show you how to make them below!
What you need for Caramel Apple Back to School Cupcakes :
- all-purpose flour
- white cake mix
- granulated sugar
- salt
- water
- egg whites
- vegetable oil
- Vanilla Bean Paste or Vanilla extract
- sour cream

To Fill the cupcakes:
After you’ve used the recipe below to make the cupcakes and they’ve cooled, it’s time to fill them with caramel apple pie filling.
Using a small knife to cut a center chunk from the middle of each cupcake. Make sure to save this top because it’ll need to go back.
Mix apple pie filling and caramel sauce together. You may need to chop up the apple pie filling a bit to make sure it fits into the center of the cupcake.
Spoon about 1 teaspoon of chopped apple pie filling into each cupcake.
Drizzle more caramel on top of apple filling if desired.
Plug cupcake back with the piece that was removed. – You may need to remove some of the bottom of the piece of cake before adding it back to the cupcake.
What you will need for the frosting:
- butter
- cream cheese
- powdered sugar
- vanilla extract
What you will need for the Mini Apples:
- Red Pearl Sprinkles
- Green Icing
- Brown Jimmie Sprinkles

To decorate Caramel Apple Back to School Cupcakes:
- Pipe a swirl of frosting on cupcakes.
- Add 10 – 16 red pearl sprinkles randomly on each cupcake.
- Pipe a small leaf of green icing (just like a blog/swiggle) on top of each red pearl sprinkle.
- Carefully add a brown Jimmie sprinkle for the apple stem.
That’s it! Now you’ve got delicious Caramel Apple Back to School Cupcakes topped with super cute mini apple sprinkles!
Now they’re ready to celebrate the new school year!

Caramel Apple Back to School Cupcakes
These super cute Caramel Apple Back to School Cupcakes are filled with caramel apple pie filling and decorated with the cutest little apples!
Ingredients
- 1CUPCAKES:
- 1 cup all-purpose flour
- 1 box white cake mix
- 1 cup granulated sugar
- 1 teaspoon salt
- 1 1/3 cups water
- 4 egg whites
- 2 tablespoons vegetable oil
- 1 teaspoon Vanilla Bean Paste or Vanilla extract
- 1 cup sour cream (8 oz container)
FROSTING:
- 4 sticks butter, room temperature (2 cups)
- 16 ounces cream cheese, temperature
- 4 cups powdered sugar
- 2 teaspoons vanilla extract
FOR FILLING:
- 1/2 cup apple pie filling, chopped up
- 1/4 cup caramel sauce
MINI APPLES:
- Red Pearl Sprinkles
- Green Icing
- Brown Jimmie Sprinkles
Instructions
CUPCAKES:
Pre-heat oven to 325F.
In a large bowl, mix together cake mix, flour, sugar, and salt.
In the bowl of a mixer, mix together the egg whites, water, and vanilla. Mix on low for about 10 seconds.
Slowly add the dry mix a little at a time. Mixing on low until everything is combined.
Add sour cream and mix well.
Mix well.
Line a muffin/cupcake tin with paper liners. Fill each cupcake liner 3/4 full of batter. Bake at 325F for 25 minutes. Remove from oven and cool.
FOR FROSTING:
In the bowl of a mixer, cream together the butter and cream cheese.
Carefully mix in powdered sugar.
Add in the vanilla and mix well.
TO FILL:
Using a small knife to cut a center chunk from the middle of each cupcake.
