Happy Galentine’s Day…. wait… what? Yes, Happy Galentine’s Day!

You know what Galentine’s Day is don’t you? haha  It’s the day before Valentines and it’s the day where you celebrate the amazing “BFFs” in your life 🙂

I have some pretty amazing gal pals in my life! I actually have so many that I don’t think I could fit them all into one blog post! BUT the top 4 girls in my life/ my BFFs/ my loves would be the following: Crystal, Meghan, Nikki, and Rachael (Yes, I did just put them in alphabetical order so that no one felt bad haha, I like to keep things equal like that) Hi girls!!!

Crystal – Married into our family and is now my cousin!
Meghan- My brother’s girlfriend and probably my future sister in law!
Nikki – Best Buddy since humm…. 2003! Holy wow!
Rachael – Big Bear’s sister /my sister in law!!

So if I had to pick my favorite ladies to spend Galentine’s Day with it would be them. What would I make for Galentine’s Day? Why I’d make these Chocolate Dipped Donuts!

So let me tell you about these Chocolate Dipped Donuts for a bit. They’re kinda “cheater” donuts. I almost didn’t post about them because they’re “cheater” donuts. I know how some people get so upset with “recipes” that aren’t totally from scratch and being a food blogger opens up a whole new world of “food snobbery” <– I think that’s the right word. I mean not that there is anything wrong with being a “food snob” if that’s what you want, it just kind of makes me sad when people push their  “food snobbery” onto others and make them feel bad about their food choices or traditions. (this is totally different than showing concern over a loved ones bad food choices in my opinion)

I say this because these “donuts” are made from canned biscuits *GASP* see… I heard it. I just saw the eye roll from a few people. In the “food world” people will look at these ingredients and say “Pff, those are not donuts and shouldn’t even be on a food blog” but then I talk to people in my own city…in my life that say “Oh my, yes I would totally make those”, “I can’t believe it’s from canned biscuit”, “my grandmother use to make these!”

So  I decided to post about them. I picture these little “donuts” in the corner of the classroom with a little “Dunce” hat on because no one wants them because they’re “not from scratch”… to that I say, “totally fine” because I’ll be over in the corner enjoying my donuts with chocolate glaze with my friends celebrating Galentine’s Day haha because I KNOW my girlfriends would love these! 😉

Chocolate Dipped Donuts

Chocolate Dipped Donuts Want a quick and easy Valentines Donut for you sweetheart? I've got the perfect recipe for you! No donut making skills required! These use canned biscuits!

  • Yield: about 16 donuts

Ingredients

For the donuts:

  • 2 cans buttermilk biscuits
  • Vegetable Oil

For the Chocolate Glaze:

  • 2 sticks unsalted butter
  • 1/2 cup whole milk, warmed up a bit
  • 2 tablespoons light corn syrup
  • 2 cups powdered sugar
  • 2 teaspoons vanilla
  • 8 ounces milk chocolate, chopped

You'll also need:

  • chopsticks or a bamboo skewer
  • Paper towels
  • A cooling rack
  • Sprinkles (optional)

Instructions

For the Donuts:

  • Heat about 2 inches of oil in a large pot. (I used a cast iron pan). Heat on medium heat until hot, this should take about 5-8 minutes. Test the oil by tossing a small piece of dough into the oil, if it sizzles it\'s ready. (or you can use a cooking thermometer and get the oil to about 350F.)
  • While the oil is heating up, prep the biscuits. Open the canned biscuits. Using the large end of a melon baller (or an apple corer) take the middles out of the biscuits. There, it already looks like a donut!!
  • Set the donut holes aside. Cook 2 donuts at a time. Drop them into the oil and wait for them to turn golden brown. This should take about 30 seconds. If they get super dark before 30 seconds, the oil it too hot! If it takes longer the oil is not hot enough!
  • Use chopsticks or a bamboo skewer to flip the donuts. Cook until the other side is a golden brown color.
  • Once cooked, move donuts to a cooling rack lined with paper towels to cool. Repeat until all donuts are done.
  • After the donuts have cooked, drop the donut holes into the oil and cook for about 40 seconds, rolling them around with the skewers. Remove them and let them cool on paper towels.

For the Chocolate Glaze :

  • In a sauce pan, melt the butter. Add in the vanilla, warm milk and light corn syrup. Whisk together. Whisk in chocolate until melted. Remove from heat and stir in powdered sugar.
  • Quickly dip the tops of the donuts into the chocolate glaze and sprinkle with sprinkles!. Stir the glaze every so often to keep it from getting stiff.
