This mouthwatering dish takes the classic flavors of traditional lasagna and transforms them into a warm and comforting soup that will leave you craving more. Lasagna soup is waiting to become your new favorite comfort food.
Typically, lasagna soup includes ground meat, such as beef or Italian sausage, which adds a savory depth of flavor. The meat is browned and then simmered with onions, garlic, and spices until it’s tender Then this meat mixture is layered with a cheese mixture and lasagna noodles before being baked in the oven. However, we’re taking all of those elements and flavors and popping them into a delicious soup!
I’m changing it up a bit today and we’re using ground turkey instead of beef and we’re going to be using bow-tie pasta instead of lasagna noodles.
Ingredients For This Easy Lasagna Soup Recipe:
- 1 pound ground turkey or ground beef
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 48 ounces pasta sauce
- 1 can (14.5 ounces) diced tomatoes with basil and oregano
- 3 cups chicken broth
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons Italian seasoning
- 2 cups bowtie pasta
- 1 cup heavy cream
- 1/2 cup ricotta cheese

How To Make Lasagna Soup:

In a skillet, add ground turkey (or beef), seasoning with onion powder and garlic powder.

Breakpart and cook until browned.

Drain Grease and set aside.

In a soup pot, combine the pasta sauce, diced tomatoes, chicken broth, salt, pepper, and Italian seasoning.

Bring to a boil and reduce to a simmer.

In another large pot, bring a pot of salted water to a boil.

Add pasta and cook for 12 minutes (or according to package directions). Drain.

Simmer for 15 minutes.

Add cooked ground meat, heavy cream, and ricotta to the soup.

Stir in pasta and serve.*
Notes
*if planning on having soup as leftovers, store the pasta separately and add it to the soup when reheating because the pasta will soak up the liquid in the refrigerator.
Top it with a dollop of ricotta cheese, fresh parsley, parmesan cheese, and/or fresh basil.
Do I Have To Use Bow-Tie Pasta?
I tried making this soup with regular lasagna noodles just broken up but it just didn’t turn out great. I like the bow-tie pasta because it has little edges that are kind of like lasagna noodles.
