Christmas Eve is tomorrow!! The tree has been up for about a week now, the house is semi decorated, I’ve made a total of like 5 Christmas treats this month, my kitchen is a mess, my living room has been turned into a craft room/work space/coat drop off area/hurricane alley and oh yeah and I still have to wrap presents.
I’m totally ready for Christmas!! — Just Kidding, I’m no where near being ready for Christmas and it’s literally getting ready to smack me in the face.
I normally have traditions. I normally watch Christmas movies, I drink hot chocolate with marshmallows and relax at least 2 or 3 nights before Christmas with BigBear and just enjoy the Christmas season.
Yeah…..I just watched my first Christmas movie of the year, last night. Ok, I watched half of it and fell asleep because lately I’ve been running on fumes. At least BigBear fixed a big mug of Hot Chocolate for me! It’s the little things…right? 😉
I swear, I’m going to start working on next year’s “Christmas To-Do list” on June 1st. Maybe, JUST MAYBE, six months will be enough time. 😉
Are you running behind too? If you are running behind and need a quick Christmas themed treat, I wanted to show you these sweet Mini Santa Hat Cupcakes with Candy Cane Kiss Centers!
You see all of that red frosting for the Santa hat? That hat isn’t incompletely made of red frosting.
There is a Candy Cane Hershey Kiss inside of it!
Three reasons as to why I make them like this.
#1. That would be a TON of red frosting for the hat without the Candy Cane Hershey Kiss in there.
#2. The Candy Cane Hershey Kiss provides a stable structure to pipe the icing around.
#3. Candy Cane Hershey Kisses are super tasty!
Ok, so maybe that’s only two good reasons and one opinion ;).
Here is how I make them.
Start with a mini chocolate cupcake. You can use a box mix or a homemade recipe for the cupcakes.
Here are a few homemade chocolate cake/cupcake recipes that I like :
Homemade Chocolate Cupcake Recipe from Sally’s Baking Addiction
Hersheys Perfect Chocolate Cake Recipe from Hershey’s
Homemade Chocolate Cupcakes from Picky Palate
Once you’ve baked your mini cupcakes and let them cool, pipe a small star/dollop of icing onto the middle of the mini cupcake.
I used a Wilton’s #8 Open Star Tip.
Take your Candy Cane Hershy Kiss and unwrap it.
Place the Candy Cane Kiss on the middle of the cupcake.
(The icing will act like a glue to hold it still)
Pipe a few white stars around the base of the Candy Cane Kiss.
Next, using the red icing, make the Santa hat.
Swirl the red icing around the Candy Cane Kiss.
Swirl the icing until the entire kiss is covered.
Top the red Santa hat with a mini marshmallow.
HO HO HO! A Mini Santa Hat Cupcake!
That’s it. Pretty quick in my opinion.
Oh I could just eat them up! Too cute!
Wait, before I forget, I wanted to mention to you about the red frosting.
In my opinion, red frosting is a pain in the rear. Because of it being such a pain, I only use it in small amounts. Normal red icing tastes bitter to me, it takes forever to go from pink to red when you’re mixing it and normally you have to use a TON of red food coloring to get red!
Here are some of my tips:
- Buy “No Taste” Red if you’re going to be using a lot of red food coloring. I can normally find it at Hobby Lobby. Our Walmart has a spot for it but it’s always sold out or they never restock it.
- I have also found that adding cherry juice (like from a jar of cherries) with the red food coloring will help to deepen the red color.
Merry Christmas!
