No matter how much I pre-plan or how much I think I’m going to get done before the holiday’s arrive I’m always one step behind! I just can’t seem to get caught up! Between office work and blog work, weekend activities, Christmas plays, family gatherings, holidays meals and shopping it can become a bit over whelming!
When I started to work with KRAFT on an easy recipe for ya’ll for the holiday season, the festive Roll cakes that I made back in October came to mind! A dessert that hardly takes anytime to make yet it always impresses!
I went with a Peanut Butter theme and stuck to a classic white cake for the winter/Christmas season! Big Bear loved it! He’s been snacking on slices of this cake for the past few days!
The filling is sweet with just the right amount of peanut butter goodness and the cake is super soft!

Wax Paper
Baking sheet with edges
Plastic bag or piping bag
For the swirls:
1 egg
2 tablespoon sugar
1/3 cup flour
1 tablespoon melted butter
1.5 tablespoons peanut butter
For Cake:
4 egg whites
1 tablespoon sugar
4 egg yolks
1/2 cup sugar
1/4 cup butter, melted
3/4 cup flour
For Filling:
8 oz cream cheese, softened
2 tablespoons butter
1 cup powdered sugar
1 teaspoon vanilla
1/2 cup peanut butter
Instructions
Pre-heat the oven to 400F.
In a medium bowl, mix together 1 egg, 2 tablespoons sugar, 1/3 cup flour and 1 tablespoon melted butter. Mix well. Add in peanut butter and mix well.
Make a template by drawing swirls onto a white sheet of paper. Lay the template onto the baking sheet. Cover with wax paper (or parchment paper).
Scoop the peanut butter batter into a plastic bag. Cut a small hole into the tip of the bag (or use a piping bag with a tip attached) Following the swirl template pipe the swirls onto the wax paper.
Place baking sheet into the freezer. Freeze for 20 minutes.
While the swirls are freezing, make the cake batter.
In the bowl of a mixer combine the egg whites and 1 tablespoon of sugar. Mix on medium speed until the egg whites form soft peaks. (About 5 minutes)
In a medium bowl, whisk by hand the egg yolks and 1/2 cup sugar. Mix until the eggs yolks are a pale yellow color. Whisk in the 1/4 cup melted butter. Mix well.
Fold in the egg whites.
Fold in the flour.
Remove the baking sheet from the freezer and carefully spread the cake batter over the swirls.
Spread the batter evenly on the baking sheet.
Bake for 6-8 minutes. Do not over bake.
Carefully remove the cooked cake from the oven.
Lay a piece of wax paper onto a flat surface.
Flip the cake over onto the wax paper and carefully peel the wax paper off of the cake revealing the peanut butter swirls.
Flip the cake over again so that the swirls are on the bottom of the cake.
Spread the peanut butter filling over the entire inside of the cake. Starting on the edge without the swirls, start to roll the cake “jelly roll style”.
Roll until you reach the end. Place the cake on a flat surface with the seam down.
Wrap in plastic wrap (or wax paper) and refrigerate for about 20 minutes. Remove the wrap, trim the edges and dust with powdered sugar.
Yields: 1 Peanut Butter Roll Cake (about 8 (1-inch) servings)

- Don’t over bake. If you over bake this cake it will crack when you try to roll it. I baked mine for 6 minutes.
- Fill and roll the cake while it is still warm!
