As I sit here in my living room listening to the wind howl outside my apartment window, while our Christmas Tree glows in the corner, I find myself thinking about everything that’s gone on this year. There have been some super awful times but there have also been a few wonderful moments.

I have three favorite times of the year…..

The summer, when I get to spend long weekends and summer nights in Carolina Beach.

Halloween, when I can let my inner kid come out, dress up and create all types of Halloween goodies.

Christmas, when I decorate the house from top to bottom in red, white and green and secretly wish that it would snow and that I could keep my tree up all year long.

Christmas is also when I want to stay in the kitchen and make all types of Christmas desserts. I make them for parties, I make them for dinners and I make them for homemade gifts.

For example, this week I’ve made about 4 batches of Hot Chocolate Cookies, 2 pans of M&M peppermint bark, 2 pans of Peppermint Fudge Topped Brownies and I’m getting ready to make another batch of Hot Chocolate Cookies along side a chocolate pie for later this week.

I can’t tell you how many giant smiles I’ve seen on people’s faces this week because of the homemade goodies that have been coming out of this kitchen! I just love it!

Now you can make the brownies from scratch but I make these using boxed brownies mix! I’m totally fine with taking a short cut with the boxed mix!

After making the brownies, I topped them with my favorite fudge and then before the fudge could set I sprinkled the top of the fudge with crushed candy canes!

You can crush regular candy canes if you want but I found a big of the this Candy Cane Crunch at World Market when we went shopping in Raleigh the other weekend.  It’s pretty much just a bag of crushed candy canes. I just love it because I can just open the bag and pour them on to the fudge instead of crushing up a bunch of candy canes.

This recipe will fill an 8×8 pan but the amount of brownies with totally depend on how big or small you cut them! They’d be perfect in a “to-go” container wrapped up with a bow!

Peppermint Fudge Topped Brownies

Peppermint Fudge Topped Brownies

Peppermint Fudge Topped Brownies Chocolate Fudge Brownies topped with a thick layer of fudge with a layer of crushed peppermint candy canes sprinkled on top.

  • Prep Time: 15m
  • Cook Time: 45m
  • Total Time: 4h
  • Yield: 8x8 Pan of Brownies

Ingredients

  • 1 box fudge brownie mix
  • 1/4 cup water
  • 1/3 cup oil
  • 1 egg
  • 4 cups semi-sweet chocolate chips
  • 2 (14 oz) cans sweetened condensed milk
  • 1 cup crushed peppermint sticks (candy canes)

Instructions

  • Preheat oven to 350F.
  • In a bowl combine the brownie mix, water, oil and egg. Mix well.
  • Line a 8x8 pan with foil or parchment paper .
  • Bake brownies for 40 minutes or until done.
  • Leave them in the pan and let them cool completely.
  • Bring a small pot filled with 2 inches of water to a boil on the stove top.
  • Place a metal or glass bowl on top of the the simmer water but don't let the bowl touch the water.
  • Add the semi-sweet chocolate chips and sweetened condensed milk to the bowl.
  • Stir until melted and smooth.
  • Pour the chocolate fudge over the top of the brownies in an even layer.
  • Top the fudge with the crushed candy cane pieces.
  • Let the fudge cool for at least 2 to 3 hours before slicing.
  • Print

    Why is it that I’ve not seen pre-crushed candy canes in my market? Unwrapping candy canes or starlight mints is the worst because the wrappers always stick to my hands due to the static cling. arg. These look incredible, and that layer of frosting is to die for.

    I so wish we got bags of candy crunch here! I had to unwrap and crush what felt like 100 candy canes the other day haha!! These brownies look phenomenal! Love that you’ve combined two delicious things; homemade fudge is my favourite thing to make and eat at Christmas!
