Beer Cheese Chicken Nachos

Ingredients

  • 2 chicken breast, boneless skinless
  • 1 bag Food Should Taste Good™ Cheddar Chips
  • 1 bag Food Should Taste Good™ Blue Corn Chips
  • 4 cups cheddar cheese, shredded
  • 8 ounces cream cheese, softened and cut into cubes
  • 12 ounces light beer
  • 1 cup water
  • 1 cup buffalo sauce
  • 1 tablespoon taco seasoning
  • chopped chives -- optional

Instructions

  • Preheat oven to 400F.
  • Add chicken to a deep oven proof dish, sprinkle with taco seasoning.
  • Pour buffalo sauce and water over chicken.
  • Cover and bake for 30 minutes or until chicken is done.
  • Remove from oven and shred chicken.
  • Pour light beer into a medium sauce pan and bring to a simmer.
  • Add in the cubed cream cheese and whisk until melted.
  • Once cream cheese is melted, whisk in cheddar cheese.
  • Whisk until melted and smooth

To Plate:

  • Pour Food Should Taste Good™ Blue Corn Chips and Food Should Taste Good™ Cheddar Chips onto a large serving plate.
  • Pour half of the beer cheese over the chips.
  • Top cheese sauce with shredded chicken.
  • Top chicken with the remaining cheese sauce.
  • Top with chopped chives for garnish
