Buttermilk Oven Fried Chicken

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup buttermilk
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon smoked paprika
  • 1/8 teaspoon pepper
  • 1/2 teaspoon seasoning salt
  • 4 cups cornflakes cereal

Instructions

  • Place chicken breasts between 2 pieces of parchment paper (or plastic wrap).
  • Smack chicken breasts with a rolling pin or large wooden spoon until chicken breasts are flattened to about 1/2 inch thick.
  • Season the chicken breasts (on both sides) with the garlic powder, onion powder, smoked paprika and pepper.
  • Lay chicken breasts in a dish and cover with the buttermilk.
  • Cover with foil and place into the fridge for 4 hours - overnight.
  • When the chicken is ready, preheat the oven to 400F.
  • Crush the cornflake cereal until it resembles breadcrumbs.
  • Remove the chicken from the fridge.
  • Pour the crushed cornflake cereal into a shallow dish.
  • Pick up each chicken breast and let the buttermilk drip off.
  • Lay chicken breast into cornflakes and coat each side.
  • Lay the chicken breasts on a baking sheet. (I lay mine on a wire rack on top of the baking sheet.)
  • Bake for 25-30 minutes or until done.
