Buttermilk Waffles with Blueberry Compote

  • Serves: 2 -4 servings

Ingredients

For Blueberry Compote

  • 1 1/2 cups blueberries
  • 1/2 cup water
  • 2 tablespoons honey
  • 1/2 cup Dixie Crystals Extra Fine Granulated Sugar

For Waffles:

  • 1 teaspoon baking powder
  • 1 1/2 cups buttermilk
  • 1 egg, beaten
  • 2 tablespoons Dixie Crystals Extra Fine Granulated Sugar
  • 1 teaspoon salt
  • 4 tablespoons vegetable oil
  • 2 cups flour
  • 1/2 teaspoon baking soda

Instructions

For Waffles:

  • In a medium bowl, mix the baking soda into 1 cup of buttermilk. Whisk in the egg.
  • Whisk in the sugar, salt and oil.
  • In another bowl, whisk together the flour and baking soda.
  • Pour the buttermilk mixture into the flour mixture and mix well.
  • If the batter is too thick, whisk in the rest of the buttermilk.
  • Let rest for 5 minutes.
  • Heat waffle iron and add batter.
  • Cook waffle for about 4 minutes or until done.

For Blueberry Compote

  • In a medium sauce pan add 1 cup of blueberries and the water. Stir in the honey.
  • Heat over medium heat until it starts to boil. Add the sugar and stir.
  • Reduce to a simmer. Let simmer for 10 minutes,
  • Add the rest of the blueberries and let simmer for 3-4 minutes.
  • Serve hot over warm waffles.
