Ingredients
For Blueberry Compote
- 1 1/2 cups blueberries
- 1/2 cup water
- 2 tablespoons honey
- 1/2 cup Dixie Crystals Extra Fine Granulated Sugar
For Waffles:
- 1 teaspoon baking powder
- 1 1/2 cups buttermilk
- 1 egg, beaten
- 2 tablespoons Dixie Crystals Extra Fine Granulated Sugar
- 1 teaspoon salt
- 4 tablespoons vegetable oil
- 2 cups flour
- 1/2 teaspoon baking soda
Instructions
For Waffles:
- In a medium bowl, mix the baking soda into 1 cup of buttermilk. Whisk in the egg.
- Whisk in the sugar, salt and oil.
- In another bowl, whisk together the flour and baking soda.
- Pour the buttermilk mixture into the flour mixture and mix well.
- If the batter is too thick, whisk in the rest of the buttermilk.
- Let rest for 5 minutes.
- Heat waffle iron and add batter.
- Cook waffle for about 4 minutes or until done.
For Blueberry Compote
- In a medium sauce pan add 1 cup of blueberries and the water. Stir in the honey.
- Heat over medium heat until it starts to boil. Add the sugar and stir.
- Reduce to a simmer. Let simmer for 10 minutes,
- Add the rest of the blueberries and let simmer for 3-4 minutes.
- Serve hot over warm waffles.
