Chocolate Peppermint Poke Cake

Ingredients

  • 1 box devils food chocolate cake mix
  • Red and White Peppermint Chips
  • 1 cup mini chocolate chips
  • 1 large tub of cool whip
  • 1 teaspoon peppermint extract
  • 3 cups cold milk
  • 1 large box of instant vanilla
  • 3 Large Eggs
  • 1/4 cup Vegetable Oil
  • 1 cup water
  • Two-quart baking dish **You can use boxed cake mix or your very own homemade chocolate cake**

Instructions

  • Pre-heat the oven to 350F.
  • In a large bowl, mix the cake mix, water, oil and egg. Beat until smooth.
  • Pour into a two quart baking dish and bake for about 30 minutes or until done.
  • Let the cake completely cool.
  • Once the cake has cooled, use the end of a wooden spoon and poke holes all over the cake.
  • In a large bowl, whisk the vanilla pudding and milk until the pudding thickens just a bit. (not too much or it won\'t soak in). Whisk in the peppermint extract.
  • Spread the pudding all over the top of the cake. Place into the fridge and let sit for 2 hours.
  • Remove from the fridge after 2 hours and top the cake with the cool whip.
  • Sprinkle the top of the cool whip with the red and white peppermint chips and mini chocolate chips. Refrigerate until ready to serve!
