Cooked Perfect Premium Fire Grilled Zesty Herb and Spices Wings with Pimento Cheese Stuffed Fried Mashed Potato Bites

  • Yield: 30 Mashed Potato Bites and about 40 wings

Ingredients

  • 6 cups mashed potatoes, COLD - homemade (my recipe below) or instant
  • 1 cup pimento cheese, cold
  • 1/2 cup finely grated Parmesan cheese
  • 2 cups Italian breadcrumbs
  • 2 eggs, beaten
  • 6 -8 cups vegetable oil for frying
  • 1 (20 oz) package of Cooked Perfect Premium Fire Grilled Zesty Herb and Spices Wings

Homemade Parmesan Mashed Potatoes

  • 6 -8 medium or large russet potatoes, peeled
  • 1 cup grated Parmesan cheese
  • 8 ounces cream cheese, softened
  • 1/2 cup milk

Instructions

  • Remove mashed potatoes and pimento cheese from fridge.
  • Use a spoon to scoop out a spoonful of mashed potatoes and roll them into a ball.
  • Keep your hands and the mashed potatoes cold while forming the balls.
  • Use your thumb and make an indention into the center of the mashed potato ball.
  • Spoon about 1/4 or 1/2 teaspoon of pimento cheese into the center and close the mashed potato ball around the cheese.
  • Roll into a ball again and sit on a flat surface.
  • Continue until all mashed potato balls have been made. 6 cups of mashed potatoes should make about 30.
  • In a bowl combine the breadcrumbs and Parmesan cheese. Mix well.
  • Brush the mashed potato bites with an egg wash made up of the beaten eggs.
  • Roll each mashed potato bite in the breadcrumbs.
  • Place into the fridge while the oil heats.
  • Heat the oil over medium heat in a large pot or Dutch oven.
  • Once the oil it hot, add the mashed potato bites to the hot oil about 3-4 at a time.
  • Fry for about 1 minute or 1 minutes and 30 seconds. Remove with a slotted spoon and lay on a paper towel to drain.
  • Don’t try to fry too many at once, you’ll make a mess and the oil temperature will drop too much.
  • Don’t fry them with the oil too hot! The outside will burn before the pimento cheese heats up in the middle!
  • Fry the first two, one at a time to judge a good oil temperature and time. We fried ours in oil that was heated on medium heat for about 1 minute.
  • Prepare Cooked Perfect Premium Fire Grilled Wings according to the package instructions.

Homemade Parmesan Mashed Potatoes

  • Peel and dice potatoes.
  • Heat a large pot of boiling water to a boil and add potatoes.
  • Cook for about 20 minutes or until potatoes are tender.
  • Drain and mash potatoes.
  • Stir in cream cheese, Parmesan and milk.
  • Stir until creamy. Place into fridge or freezer until super cold.
