Ingredients

  • 1 loaf of french bread
  • ½ cup Grated Parmesan cheese
  • Salt and pepper
  • 1 ½ cup milk
  • 4 tablespoons flour
  • 4 tablespoons butter + some for brushing onto bread
  • 4 tablespoons Dijon Mustard
  • 18 thin slices of ham
  • 6 ounces of shredded swiss cheese
  • 6 eggs

Instructions

  • Pre-heat the oven to 400F.
  • Lay the sliced of bread on a baking sheet.
  • Brush each side of each slice of bread with a little bit of melted butter.
  • Once the oven is preheated, toast the sliced of bread in the oven for about 2 minutes. Flip the bread and toast the other side for about 2 minutes. Don\'t let it burn.
  • Remove the bread from the oven and lay out six of the slices.
  • Spread on a layer of mustard, 1 oz of cheese, 2 pieces of ham, and a top slice of bread.
  • Place the sandwiches back onto the baking sheet.
  • In a sauce pan, melt 2 tablespoons of butter. Add the flour and whisk until smooth and golden colored.
  • Slowly whisk in the milk and raise the heat just a little and whisk until the sauce starts to thicken.
  • Add salt and pepper to taste.
  • Once it starts to thicken, remove it from the heat and add the Parmesan cheese. Whisk until the cheese melts.
  • Scoop the sauce on to the tops of the sandwiches.
  • Put the tray into the oven and turn the broiler on.
  • Broil the tops for about 4 minutes or until the cheese it hot and bubbly.
  • Fry the eggs and place one egg onto each hot sandwich. To fry the eggs, heat a pan over medium heat. Crack an egg into the center of the pan and let cook untouched for about 3-4 minutes or until the white of the egg is solid.
  • I cook my eggs with a touch of butter and a sprinkle of pepper.
  • Serve Hot.
