Tiramisu for Two

Ingredients

  • 3 egg yolks
  • 2 tablespoons white sugar
  • 1/3 cup milk
  • 8 ounces mascarpone cheese
  • 1/2 cup whipping cream
  • 6 tablespoons white sugar
  • 1/2 teaspoon vanilla
  • 12 (3 inch) ladyfingers
  • 2 tablespoons of rum (optional)
  • 1/2 cup cold coffee
  • 1/4 cup cocoa powder
  • Mint for garnish (optional)

Instructions

  • In a sauce pan, whisk the egg yolks and 2 tbs sugar until they turn a pale yellow. Heat on low-medium heat. Whisk 2-3 minutes.
  • Add the milk and whisk until smooth about 3-4 minutes.
  • Pour into a bowl and cover with plastic wrap. Press the plastic wrap down onto the surface of the egg yolk mixture. (Pressing it onto the surface will prevent a film from forming)
  • Place into fridge for 1-2 hours.
  • Remove from the fridge and whisk the mascarpone cheese into the egg yolks until smooth.
  • In another mixing bowl, with an electric mixer, whisk together the whipping cream, sugar and vanilla.
  • Whisk for 5-7 minutes or until soft peaks form.
  • Brush the ladyfingers with the coffee and rum (if using the rum).
  • Layer the a few ladyfingers into serving dishes, add a layer of the mascarpone cheese mixture.
  • Top with a layer of whipped cream.
  • Sprinkle cocoa powder on to the whipped cream.
  • Lay another layer of ladyfingers, top with a more of the mascarpone cheese mixture.
  • Top that with the whipped cream.
  • Top with cocoa powder.
  • Place into the fridge for 4-6 hours.
  • Garnish with mint.
