Ingredients
- 3 egg yolks
- 2 tablespoons white sugar
- 1/3 cup milk
- 8 ounces mascarpone cheese
- 1/2 cup whipping cream
- 6 tablespoons white sugar
- 1/2 teaspoon vanilla
- 12 (3 inch) ladyfingers
- 2 tablespoons of rum (optional)
- 1/2 cup cold coffee
- 1/4 cup cocoa powder
- Mint for garnish (optional)
Instructions
- In a sauce pan, whisk the egg yolks and 2 tbs sugar until they turn a pale yellow. Heat on low-medium heat. Whisk 2-3 minutes.
- Add the milk and whisk until smooth about 3-4 minutes.
- Pour into a bowl and cover with plastic wrap. Press the plastic wrap down onto the surface of the egg yolk mixture. (Pressing it onto the surface will prevent a film from forming)
- Place into fridge for 1-2 hours.
- Remove from the fridge and whisk the mascarpone cheese into the egg yolks until smooth.
- In another mixing bowl, with an electric mixer, whisk together the whipping cream, sugar and vanilla.
- Whisk for 5-7 minutes or until soft peaks form.
- Brush the ladyfingers with the coffee and rum (if using the rum).
- Layer the a few ladyfingers into serving dishes, add a layer of the mascarpone cheese mixture.
- Top with a layer of whipped cream.
- Sprinkle cocoa powder on to the whipped cream.
- Lay another layer of ladyfingers, top with a more of the mascarpone cheese mixture.
- Top that with the whipped cream.
- Top with cocoa powder.
- Place into the fridge for 4-6 hours.
- Garnish with mint.
