Most people view this weekend, as a holiday, a get off of work free pass, time to fire up the grill and maybe even take a trip to the beach. And while all of that stuff is fabulous and really run, don’t forget why you have a long “Holiday” weekend.
I always supported our troops, but I didn’t fully understand the pride and love for our troops until I met my husband. Once I became a Military Wife, I understood it 100%. The pride that you develop when someone you love is in the Military is incredible. I am so thankful for our troops. I am so thankful for my husband and I am so, so thankful to have him here with me . *Side note, have you ever heard the song Just a Dream by Carrie Underwood? If not you need to watch the video for it on youtube, and grab some tissues.. you’ll need them….. It came out the summer that Hubby was in Iraq. Talk about a song that I DID NOT want to hear every time I got into the car.*
3 cups sugar
1 (8 oz) package cream cheese
6 large eggs
3 cups all-purpose flour
Red Food Coloring
Blue Food Coloring
1 teaspoon rum extract
*Whipped Topping and Fruit** optional
In a stand mixer, beat butter until creamy. Add sugar and beat until light and fluffy.
Add cream cheese, mix well. Add eggs, 1 at a time, mix well after adding each one.
Slowly add in the flour. Mix on low speed until completely blended. Stir in rum extract.
Divide batter into 3 bowls. Leave one white, color one blue and color one red.
Pour 1/2 of the blue batter into a bundt pan. (Or whatever pan you’re using)
Pour a thin strip of white batter in the center of the blue layer. Cover with the remaining blue batter.
Pour a layer of Red Batter, pour a layer of white batter and finish with a layer of red batter.
Bake at 350F for 1 hour and 10 minutes. Or until done. Let cool for 1 hour on a wire rack. Invert onto cake plate. Slice and Serve.
*I love pound cake with whipped topping and fruit*
