This Taco Rice is one of our favorite go-to meals! Perfect on its own and great for stuffing tacos! Hard Taco Shells or Soft Tortillas, fill either for the perfect lunch or dinner!
I love to share family recipes and recipes that my friends love. This particular recipe is something that my husband, Thomas, came up with and we’ve been eating it for years.
Normally, we’ll use it to make tacos but to be honest, I love it just as it is in a bowl.
Whether you prefer the crunch of hard taco shells, the softness of tortillas or just a rice bowl, Taco Rice is the perfect choice for lunch or dinner.

Ingredients For Taco Rice:
- ground turkey or ground beef
- Goya Yellow Spanish Rice
- taco seasoning
- sweet corn
- Mexican style shredded cheese
- parsley or cilantro optional for garnish

How To Make Taco Rice:

Measure water needed for rice and bring to boil.

Once at boil, add rice.

Cook at low simmer for 18-22 minutes until rice is tender.

Cook ground meat until browned (Drain grease if needed)

Add taco seasoning to seasoning and 2/3 cup water to meat. Stir.

Add corn to meat and stir.

Simmer on low until rice is ready.

Add rice to meat and corn.

Stir in one cup of taco cheese. Stir well.
Do I Have To Use Goya Yellow Spanish Rice?
I think so. I mean of course, you don’t HAVE to use it. However, this is the rice we use and it turns out great every time. We’ve tried other rice and other yellow rice brands but this is the one we think taste the best for this recipe.
What Else Can I Put Into This Rice?
We don’t normally use anything else but you could add rinsed and drained black beans and/or diced tomatoes.
If you want this taco rice to be more saucy, you can always add some salsa to the recipe!
Can This Be Made Ahead?
It can be and it is great for leftovers. Just store cooled leftover taco rice in an airtight container in the fridge for 3-4 days.

- 1 box Goya Yellow Spanish Rice + 2 cups water
- 1 ounce packet taco seasoning + 2/3 cup water
- 10 ounce bag frozen sweet corn, heated/cooked
- 2 cups Mexican style shredded cheese
- parsley or cilantro optional for garnish
Instructions
Measure water needed for rice and bring to boil.
Once at boil, add rice.
Cook at low simmer for 18-22 minutes until rice is tender.
Cook ground meat until browned (Drain grease if needed)
Add taco seasoning to seasoning and 2/3 cup water to meat. Stir.
Add corn to meat and stir.
Simmer on low until rice is ready.
Add rice to meat and corn.
Stir in one cup of taco cheese. Stir well.
Use the second cup to top tacos.
