My friend Nikki isn’t shy about letting me know about desserts that she wants me to make haha. When she finds an amazing looking dessert she almost always shares it to my Facebook wall with a “make this for meeee” comment. When she shared a S’more Pie recipe on my Facebook with the comment “Aaaaaahhhhhh!!!!”, I took one look at it and knew that I had to recreate it! Her sister, Toni, commented as soon as Nikki posted it to my wall and said “One of YALL make this for me!!!”

So right then and there I wrote it down on my “to make list”. We were headed down to NC to visit Toni anyways so I was set that I needed to make this “s’more pie” to take with us.

When I made these to take with us to Wilmington, I made them pretty close to the original recipe (with a few minor changes) but I’ve changed it up a bit more for this post. I found the recipe that Nikki wanted me to make over on Maria and Josh’s blog Two Peas and Their Pod, which sent me to the S’more pie on  Tonya’s Blog 4 Little Fergusons, which she adapted from the S’more Pie on  Shelly’s blog Cookies and Cups. Whoa. haha

FYI if someone ever sends a photo of a dessert that they want you to make, you *might* just be able to use the google image search to find out where it came from and it there is a good recipe attached.

Oh and for the trip to Wilmington I also made 4 mini pies (like the one pictured above) with this recipe. So just so you know, this recipe will make 1 large pie or 4 smaller ones.

So how did I change up the already amazing recipe? Well, for starters, I only used chocolate chips in this recipe instead chocolate chips and chocolate bars. There isn’t anything wrong with using both kinds but I don’t normally have chocolate bars around the house but I have been known to squirrel away a few bags of chocolate chips in the baking cabinet!

I will say that the first time I made these pies I did use chocolate bars only because I had some leftover from Easter but I can’t tell a difference when I make the pies with only chocolate chips.

I also reduced the amount of graham crackers crumbs because too many make pies too dry for my liking. (But play around with that amount, you might want more than I used)

Ooooooooo and I added caramel to the last few I’ve made. Whoa, what? Ok, now I’m going to tell you that these are simply amazing without the caramel so you can totally leave that out if you want too but I love all things caramel so it was a no brainier for me. I have to keep it in there now!!

Love S’mores? You’re pretty much going to fall head over heels for this pie! It’s the perfect combo of chocolate, graham crackers, caramel and warm melty marshmallows.

Caramel S’more Pie

  • Yield: One 9 inch pie

Ingredients

  • 1 stick butter, room temperature (plus a little extra for buttering the pie dish)
  • ½ cup sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 1 cup flour
  • 1/2 cup crushed graham cracker crumbs
  • 1 teaspoon baking powder
  • 7 ounces  marshmallow cream
  • 1 cup caramel bits or caramel ice cream topping
  • 1/2 cup chocolate chips for the bottom of the pie
  • 1/2 cup chocolate chips for the top of the pie
  • 1 -2 cups mini marshmallows (I used about 1.5 cups)

Instructions

  • Preheat oven to 350°F
  • Lightly butter the pie dish. (I used a 9 inch pie dish)
  • Mix the butter and sugar together until combined and creamy.
  • Add  in the egg and vanilla. Mix Well.
  • Stir in the flour, graham cracker crumbs and baking powder.
  • Divide the dough in half.
  • Press half the dough in the bottom of the pie dish.
  • Pour/Scoop the marshmallow cream over the bottom pie crust.
  • It may be "lumpy looking" but give the marshmallow cream a few minutes and it'll smooth out on it's own. (If you want it to me smooth, not that it matters but things like that bug me haha)
  • Add the caramel on top of the marshmallow cream. Sprinkle on mini marshmallows and 1/2 a cup of chocolate chips.
  • Break apart pieces of the remaining pie dough and place it in sections on top of and around the marshmallows. Sprinkle the top with 1/2 cup chocolate chips.
  • Bake for about 20 minutes or until lightly browned.
  • Remove pie from oven and let cool.
  • The marshmallows will "balloon" up some in the oven but they'll drop back down once it cools.
  •  
  • Let it cool completely in order to be able to slice this like a cookie cake or let it cool for just a but and scoop it out!

    Angie, I am all over this pie and will make it for my kids soon. i love marshmallows and chocolate so yes it will be perfect – just will have to adapt so the girls can eat it. Thank you!

    I really give up. Recipe calls for marshmallow cream AND marshmallows. Do not see in the directions where I am to use the marshmallows. Together, or either or??

      You add the mini marshmallows when you add the chocolate chips to the middle of the pie
