My mom and my son love ice cream floats! Soda ice cream floats are a great way to cool down when it is super hot during the summer, and they’re easy to make, too. So, we’re taking that beloved summer treat and turning it into a frozen summer dessert that tastes like an ice cream float and sliced like a pie!
This is one of those desserts that feels a little nostalgic and a little extra all at once. It’s cold, creamy, easy to slice, and perfect for cookouts, summer parties, or anytime you want something fun to make for yourself or with the kids.
What you need for this Cherry Coke Float Pie:
- Vanilla wafer cookies
- Butter, melted

- Vanilla instant pudding

How to make Cherry Coke Float Pie:
We’re going to start with the pie crust. I think most dessert pies out there have graham cracker crusts, but we’re making a vanilla wafer cookie crust for this ice cream float pie.
Let’s talk about that crust
The vanilla wafer crust is so simple but works perfectly here. It brings that sweet, buttery crunch that balances the creamy pie filling really well.
You’ll want to crush the cookies into fine crumbs, mix them with melted butter and sugar, and then press everything firmly into the pie dish. Be sure to get the crumbs pressed well on the bottom and up the sides so the crust holds together nicely.

Making the Cherry Coke pie filling
Cherry Coke Float Pie Filling:
Alright, now an ice cream float is pretty much vanilla ice cream with a soda poured on top of it. So our pie filling needs to have somewhat the same consistency and flavor but we want to be able to slice this pie.
So to get that result, we’re going to make a filling using my no churn ice cream recipe as the base with the cherry coke as the soda/fizz!
Cherry Coke, heavy cream, pudding mix, and powdered sugar whip together into a thick, fluffy filling that tastes like a frozen float in pie form.
For extra Cherry Cola Flavor = boil 1 cup Cherry Coke for 20-30 minutes until reduced. Let cool and add 3 tablespoons of condensed cherry coke to pie filling while mixing. You can also add a tsp or so of cherry juice to this if you want even more cherry flavor.
Once the filling is thickened, pour it straight into the cooled crust and smooth it out. Then let the fridge do the rest of the work. After several hours of chilling, you’ll have a pie that’s cold, creamy, and ready for topping.

This pie needs plenty of chill time, so it’s a great make-ahead dessert for summer get-togethers.
Crème chantilly for the top
Right before serving, top the pie with homemade crème chantilly. It’s light, fluffy, and adds the perfect finishing touch to that cherry cola filling.
What is crème chantilly? Its just a fancy word for whipped cream.
You can pipe it on if you want the pie to look a little fancy, or just spoon it over the top. Add a few cherries and you’ve got such a fun dessert for summer parties, cookouts, or holiday weekends.

If you want to boost the flavor a little more, you can boil 1 cup of Cherry Coke for 20 to 30 minutes until reduced. Let it cool completely, then mix about 3 tablespoons of that condensed Cherry Coke into the filling.
That little extra step gives the pie a stronger cherry cola flavor without changing the creamy texture.

Ingredients
Crust:
- 11 ounce box vanilla wafer cookies, crushed into fine crumbs
- 8 tablespoons butter, melted
- 2 tablespoons white sugar
Pie Filling:
- 1 cup Cherry Coke
- 2 cups heavy cream
- 3.4 ounce box vanilla instant pudding
- 3/4 cup Powdered Sugar
Crème Chantilly:
- 1 cup whipping cream
- 1 teaspoon vanilla extract
- 1 tablespoon white sugar
Optional Toppings:
- Cherries
Instructions
Preheat oven to 350F.
In a bowl combine crushed vanilla wafer cookie crumbs, melted butter and sugar.
Mix well until crumbs have the consistency of wet sand.
Press crumbs firmly into a 9 inch pie dish. Make sure to press crumbs firmly on bottom and sides of tart pan.
Bake for 10 minutes.
Remove and Let cool.
Filling:
Add Cherry Coke, heavy cream, vanilla pudding and powdered sugar to bowl of a stand mixer.
Mix on high for 5-10 minutes until mixture is thick.
Pour filling into prepared pie pan.
Place into fridge and chill for 8 hours or overnight.
Crème Chantilly:
In the bowl of a stand mixer, combine whipping cream, sugar and vanilla extract.
Whip on high until firm peaks form.
Pipe onto cold pie right before serving
Garnish pie with cherries. Serve cold.
