Birthdays are great in my opinion and I love mine. My birthday falls on June 23rd and it’s one of my favorite days just because I can congratulate myself on making it another year. While I’m not a huge fan of cake/birthday cake, I do love that classic birthday cake flavor.
You know what I love more than cake? Ice Cream! I’ll take ice cream over cake any day. So, if you’re not a fan of cake but want something birthday cake flavored to celebrate with, what do you make? Ice Cream that taste like birthday cake! Vanilla, Sprinkles and Cake flavor, this ice cream has it all.
You know what I love about this recipe? It doesn’t need an ice cream maker! Instead of an ice cream maker, you’ll just need an electric mixer and a freezer for this no churn ice cream recipe!

How to make Homemade Birthday Cake Ice Cream:
You’re going to love how easy it is to make this birthday cake ice cream at home.
- First, we’re going to start with the ice cream base. You’ll need an electric mix for this part.
We’re whipping the heavy cream, dry cake mix and powdered sugar together to get our birthday cake flavor base going.
- Then it is time for the sweetened condensed milk and vanilla
Once you’ve added those crank that mixer up to high and whisk that mixture for about 5 -10 minutes or until stiff peaks form.
- Don’t walk away!
Don’t leave it and walk away if you’re using a stand mixer because you might forget about it and then you’ll end up with sugar butter.
- To add a bit more birthday cake flavor, we’re whisking in lots of rainbow sprinkles.
Be sure to save a few to sprinkle on top of the ice cream.
If you’re worried about there being too many sprinkles in the ice cream, you can always add about 1/2 of what the recipe calls for and save the extras for sprinkling on top once the ice cream is frozen and scooped out. - Getting it ready to freeze.
Spoon mixture into loaf pan, smooth it out with a spatula if needed and sprinkle rainbow sprinkles over top of the ice cream.
- Wrap it up!
Cover with plastic wrap and freeze for several hours or overnight until frozen
Once it is frozen, just scoop it out and enjoy it alone or with a side of birthday cake!
