Last Sunday was Big Bear’s 31st Birthday. Thankful he was actually excited about this birthday!

I have to admit that I count Birthdays as our “New Years!” I don’t normally consider “New Years” to be the beginning of the year, I count birthdays.
Like my personal “new year” started in June when I turned 30. Big Bear’s “new year” started last Sunday.

It’s just how I view life.

It also amazes me how much changes (or doesn’t change) in 1 year.

Just think about it!What’s been going on with Thomas and I since we celebrated his birthday last year?

So many things have gone on since last August (2014)….


Starting last August….We Celebrated his 30th birthday with a cook out at the house! (I even made him a peppermint patty birthday cake!)
We celebrated our niece’s birthday and my dad’s birthday!

The house went through a “Nightmare Before Christmas” makeover for Halloween.

Big Bear’s Grandma (Grandma Mary) Passed Away. (We sure do miss her!)

The same month, we had our first Christmas without her. It was a rough end to the year.

The following March, BigBear and I went to Disney World with my brother and his girlfriend.We celebrated birthdays for both our parents and all of our siblings.

We celebrated our cousins and god-daughter’s birthdays.

I made quite a few trips to Wilmington.

Big Bear and I started a Sunday Morning Tradition of golf! (Ok, he golfs, I drive the cart haha)Our baby cousin Paisley was born. <3

In June, I turned 30.
We found out that we’re probably getting ready to loose our current house. (It’s a rental and it’s out of our control)
Big Bear and I finally (seriously) decided to move to Wilmington, NC.

I started apartment hunting in Wilmington!

I started filming a few live cooking demos for our local new station.

Well I’m sure that more happened but that’s all that’s coming to mind haha.

So anyways, back to it being Big Bear’s Birthday.

Instead of cake this year, I made Peanut Butter Fudge Brownies for him this year and I think he liked them better than any cake I’ve made for him haha.

Recently, I received a copy of Shawn Syphus’ cookbook “Express Lane Cooking” in the mail to review!

Shawn is the fabulous blogger behind the blog “I Wash, You Dry“! She just published this amazing cookbook and I loved checking out all of the recipes!

These Peanut Butter Fudge Brownies jumped right out at me. I knew that Big Bear would love these!

With permission, I’m sharing Shawn’s Peanut Butter Fudge Brownie recipe from her new cookbook, “Express Lane Cooking“!Her recipe calls for 1 box of your favorite brownie mix, peanut butter cups, peanut butter chips, sweetened condensed milk and a splash of vanilla!

I actually love boxed brownies haha so I was all for this quick shortcut! Since these are Peanut Butter Fudge Brownies, I picked up a box of the Betty Crocker Supreme Brownie mix that’s got Hershey’s Chocolate and Reese’s Peanut Butter chips in the mix!

 

I also grabbed a bag of Reese’s peanut butter cups because those are Big Bear’s favorite!

Then I headed on over to the baking section and grabbed a bag of peanut butter chips (they’re right beside the chocolate chips) and a can of sweetened condensed milk!

 

Then I headed home and whipped up the beauties for Thomas’ birthday!
They were super easy to make and he went crazy over them.

So the only thing I did different from the recipe was I popped these into the fridge to set instead of letting them sit on the counter for 2-3 hours. The directions said “Let the fudge cool for at least 2 to 3 hours before slicing.” and my brain said, “Fudge, Cool in Fridge” so yea. But it’s ok because they were still perfect.The only difference was that my peanut butter cups weren’t melted. So no matter how you let them sit, they’re gonna be tasty!

Peanut Butter Fudge Brownies

  • Yield: Makes 16-18 small brownies     

Ingredients

  • 1 (18 1⁄2 oz [525 g]) box brownie mix + ingredients needed to prepare brownies
  • 2 cups (375 g) chocolate peanut butter cups, such as Reese’s, halved (about 35)
  • 2 cups (480 g) peanut butter morsels, found near the chocolate chips
  • 1 (14 oz [415 ml]) can sweetened condensed milk
  • 1 teaspoon vanilla extract

Instructions

  • Prepare your brownies according to package instructions in an 8″ x 8″ (20 x 20 cm) pan that has been lined with parchment paper. Leave them in the pan and let them cool completely.
  • Top the brownies with the halved chocolate peanut butter cups, and then prepare the simple peanut butter fudge.
  • Bring a small pot filled with 2 inches (5 cm) of water to a boil on the stove top. Find a metal or glass bowl that can easily rest on top of the pot without the bottom touching the water. Add the peanut butter morsels, sweetened condensed milk and vanilla to the bowl. Stir the mixture over the boiling water until it becomes smooth. Pour the peanut butter fudge over the top of the brownies in an even layer. Let the fudge cool for at least 2 to 3 hours before slicing.

Shawn’s Cooking Tip:

  • Lining a baking pan with parchment paper makes it extremely easy to remove the baked goods from the pan once they are cool, so slicing them into the perfect size bar is a breeze!

    You guys have had one busy year! So happy your moving to Wilmington. We wanted to relocate there for a while, but it never happened. We stayed here in Florida for the free lottery scholarships, but the public schools are so bad we have to pay for private grade school. There’s no winning, except with these brownies. Happy birthday Big Bear!!!!!!

    I grew up with box mix brownies, and love them, so I am all over these! I also happen to love peanut butter fudge and peanut butter cups, so I’m pretty sure they’d be dangerous in my hands.

    You’ve had such a busy and exciting past year. I’ve enjoyed reading through all your adventures. I must say though that my favorite is your Halloween house decorations. Too stinking cute! You’re killing me with these brownies. I don’t really have much of a sweet tooth unless it comes to peanut butter cups. This fudge and brownie combo is sure to do me in (in a good way of course)! Pinning!
