Avocado Chicken Cabbage Wraps & a Giveaway #AvoAllStars

Take avocados and make a recipe for game day entertaining, but it can’t be a normal obvious recipe like guacamole! This was my challenge for this post. A challenge I accepted and got right to work on. 

The other day I had this cute avocado gift pack show up at my office and I immediately started to brain storm ideas!  Since we’re still in the middle of our Healthy/Clean Eating challenge here in the Barrett household, I knew that my avocado dish had to fit into my guidelines and be something that wasn’t boring or tasteless!

My brain went to work, but while my brain was working it was also headed straight into the direction of cookies and cakes, mainly because that’s what I’ve been seeing a lot of lately. You know, where you can sub avocado for things like butter or something in cookie and cake recipes? No? Nevermind then. 

Back to the Avocado Chicken Cabbage Wraps! Well, they were suppose to be Avocado Chicken Lettuce Wraps. I had them all planed out, they were going to be perfect. But BigBear didn’t bring home lettuce from the store. He brought home Napa Cabbage haha. But hey, it worked out just as well. 

I got the idea for the avocado chicken from the recipe I used for the avocado pasta that I made earlier this month. I knew that if I wanted BigBear to eat these that I would need some kind of meat in them and I knew that the avocado sauce would coat the chicken perfectly! 

I’ve also been on a tomato and fresh mozzarella kick here lately too in this Healthy/Clean Eating challenge so you guessed it, those went into these wraps as well! 

I could totally see myself snacking on these during a game. They fit perfectly into our Healthy/Clean Eating challenge, they are “portable” and they taste great. It’s creamy, garlic avocado sauce over shredded chicken with fresh mozzarella and tomato slices wrapped in a crispy, crunchy cabbage leaf!   

What you need:

2 boneless skinless chicken breast
2 chicken bouillon cubes
Avocado Sauce (recipe below)
1 Tomato, thinly sliced into strips
Fresh mozzarella, thinly sliced into strips
Napa Cabbage Leaves
toothpicks
For the Avocado Sauce:

4 tablespoon olive oil
4 garlic cloves, minced
2 avocado
Salt and Pepper to taste

Instructions
Bring a large pot of water to a boil. Add in 2 chicken bouillon cubes and 2 chicken breast. Boil chicken until white and cooked throughout.
Remove chicken and shred. (I put my chicken in the bowl of my stand mixer and turn it on low. Shreds chicken in seconds)
Slice the avocado open. 
Remove the seed.
Slice the avocado from the flesh. 
In a food processor, add the olive oil, garlic, avocado, pepper and salt.  
Blend until smooth. 
Mix the avocado sauce with the chicken. 
To assemble:
Lay a cabbage leaf out on a flat surface. Spread some of the avocado chicken down the center of the leaf. Top with slices of tomato and mozzarella. 
Starting with the leafy end, roll towards you. Secure with a toothpick. 
REMOVE  toothpick before eating.

Ingredients

Yields about 25 Rolls (I DID NOT make that many, I made about 8 and then saved the rest of the avocado chicken for later. It makes a lot though!
